Global Apron week 14, cook with June ingredients{ pepper corn} rosemary lemon pepper fish is marinated and cooked with spices,herbs, lemon. It is full of tasty flavor when cooked and it is great to serve as a side dish or an appetizer. Enjoy Course: side dish, diet : non vegetarian, nutrition value: vitamin D,C, Omega 3, Calcium, Iodine.

Ingredient

Cooking instructions

* Step 1

For marinade: in a bowl 🥣 add lemon juice 🍋, turmeric powder, red chilli powder 🌶️, paprika powder 🌶️, coriander powder and salt 🧂 mix well, pat dry the fish pieces 🐠, arrange them in a bowl 🥣 pour the marinade on the fish pieces 🐠, mix with your spoon and set aside for 15 min.

* Step 2

Shallow fry the marinade fish pieces 🐠 on medium heat, when 1/2 % done remove from oil, keep aside.in separate pan add 1-2 tbsp oil, add cumin seeds when starts to crackle, add black pepper corn, stir and add finely chopped onion 🧅, cook for 1 min, add ginger garlic paste 🧄, green chillies paste and mix well, cook for another 1 min.

* Step 3

Add black pepper powder, coriander powder, paprika powder 🌶️, salt 🧂 and mix well cook for 1 min, add add rosemary 🌱, dry mixed herbs🌱 and mix well, add water 💦 and finally garam masala powder mix well, let it boil for a few mins, when gravy becomes thick add fried fish pieces 🐠, cook first side in the gravy, then turn and cook another side or till the fish pieces are cooked. Finally add few drops of lemon juice 🍋 on top and mix gently.

* Step 4

Remove and add in serving plate and serve with onion rings 🧅 and garnish with finely chopped coriander leaves 🌿.

Note: make thick and dry gravy, for better taste, don't make thin gravy in this recipe.

* Step 1

Marinade the fish pieces with turmeric powder, lemon juice 🍋 and salt for at least 30 mins.

Soak poppy seeds in 1/2 cup boiling water 💦 and allows it to soften a little, in a mixer add chopped onions 🧅, garlic cloves 🧄, chopped ginger, whole black pepper corns, coriander seeds,cumin seeds, red/ kashmiri red chillies powder 🌶️, turmeric powder, chopped green chillies,blanched almonds, vinegar and soaked poppy seeds and grind it into smooth paste and keep aside.

* Step 3

Heat oil in a frying pan, add marinated fish pieces and fry on either side for at least 2 mins or little golden. Heat oil in a wok and add ground onion paste and cook until oil comes out, (the more you cook the more flavour it will develop).

* Step 4

Add whisked yogurt and mix well, keep stirring till it thickens, add fried fish pieces and mix gently, cook for 1 mins, add garam masala powder and stir lightly, add milk 🥛 and salt, stir gently, allow the fish pieces to cook in the curry for 5-6 mins,on slow medium flame till it develops nice flavour, serve hot. Garnish with finely chopped coriander leaves 🌿, parsley and serve with mint & onion kachumber salad.

* Step 1

Take a bowl and add pork minced, add finely chopped onions 🧅, ginger-garlic paste 🧄, soy sauce, red chillies flakes, kashmiri red chillies powder 🌶️, green chillies paste, cumin seeds, coriander & cumin powder,garam masala powder, Chaat masala powder, 1 tbsp oil,finely chopped coriander leaves 🌿,salt, turmeric powder and corn flour 🌽mix well, make patties the size of your choice and shallow fry them, until golden brown.

Remove and keep on kitchen napkin, keep aside.

Take home 🏠 made buns and cut from the middle, arrange all the vegetables, sprinkle little salt 🧂and black pepper powder, add pork patties, chopped cheese/ cheese slices, some rings of onions 🧅 and cover with another piece of bun and serve.

* Step 1

Wash and dry baby spinach 🥬, chopped finely and keep aside. Cut onions 🧅, tomato 🍅, green chillies, coriander leaves and keep aside.

* Step 2

Take a pan and add oil for shallow frying, add potatoes cubes 🥔, fry them until golden, remove them on kitchen napkin, keep aside.

Heat oil, add cumin seeds when start to crackle, add finely chopped onions 🧅, cook till golden, add finely chopped tomato 🍅 mix well. Add salt mix well.

* Step 4

When tomato 🍅 become mushy, add ginger garlic paste 🧄, finely chopped green chillies and mix well. Add kashmiri red chillies powder 🌶️, coriander & cumin powder and mix well.

* Step 5

Finally add chopped baby spinach 🥬 mix well with the masala and cook on slow flame. But stir always, cook for 5 mins and add fried potatoes cubes mix, cook for 1 min and serve hot.

This is my first recipe with butternut squash, it's spicy and tasty too, I hope you all will like it.

* Step 1

Pre heat oven at 180°c,Cut butternut squash into halves, scoop the pulp out, discard the seeds and keep aside. Shallow fry them, until golden brown, remove on kitchen napkin and keep aside.

Heat oil, add cumin seeds when start to crackle, add finely chopped onions 🧅, cook till golden, add ginger garlic paste 🧄 mix well.

* Step 3

Add finely chopped tomato 🍅, salt and mix well, add kashmiri red chillies powder 🌶️, turmeric powder, coriander & cumin powder,green chillies paste and mix well, cook for 3 mins, add scooped pulp in and mix well, add little finely chopped coriander leaves 🌿 mix well, stuffing is ready.

* Step 4

Take fried butternut squash halves and stuff in the filling, add halves on baking tray and bake for 5 mins, serve hot, garnish with finely chopped coriander leaves 🌿, finely chopped green chillies.
