Dropped Egg Miso Soup

One of the dishes that bring back my childhood memories is ‘Dropped Egg Clear Soup’. My family was poor, but my mother always prepared nutritious meals for my sisters and me. She often used Eggs, that must have been a great source of protein for her to cook. This is Miso Soup version of the soup. Today I added Baby Spinach because it was easy to use. I didn’t need to wash or chop up anything. Super quick and easy soup, but very comforting, and I needed freshly cooked Rice to enjoy it.

Ingredient

Cooking instructions

* Step 1

Heat Dashi Stock (OR Water & Dashi Powder) in a small saucepan. *Note: If you use Dashi Powder, use a good quality one. You would need 1/2 teaspoon for 1 cup Water, OR use it according to the instruction on the package.

* Step 2

Season with Miso.

* Step 3

Crack an Egg into a small cup and carefully add it to the gently simmering soup. When the Egg is softly cooked, add Baby Spinach. It won’t take long for Baby Spinach to get cooked.

* Step 4

Enjoy with freshly cooked Rice. *Note: You may wish to add some finely chopped Spring Onion to the soup.

‘Tanin’ Don (Pork & Egg Rice Bowl)

Do you know ‘Oyako’ Don’? It’s a very popular Japanese rice bowl dish. ‘Oyako’ means ‘Parent and Child’ and the dish is cooked with Chicken and Eggs. This dish is called ‘Tanin’ Don, and ‘Tanin’ means ‘stranger’ OR ‘unrelated person’. ‘Tanin’ Don is cooked with Pork and Eggs, sometimes Beef and Eggs, and those ingredients are unrelated. It’s a quick and easy rice bowl dish. Minced Pork OR Minced Beef can be used, but I like to use thinly sliced Pork Belly.

Ingredient

2 tablespoon

4-5 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Cut thinly sliced Pork into bite-size pieces. Prepare all other ingredients.

* Step 2

Place the Sauce ingredients in a large frying pan, scatter sliced Onion, bring to the boil. When it is boiling, add Pork pieces evenly, and cook for a few minutes until Pork is cooked.

* Step 3

Scatter Spring Onion evenly, then pour the whisked Eggs to cover, and cook until Egg is softly set OR half cooked. DO NOT stir.

* Step 4

Half fill a bowl with freshly cooked Rice and cover it with the Pork and Egg mixture. Sprinkle with Shichimi (Japanese Chilli Spice Mix) if you like it, and enjoy.

Yuba (Tofu Skin) Rice Bowl

It looks like Egg, but it is ‘Yuba’ (Tofu Skin). When Soy Milk is heated, a protein rich film (skin) is composed on the surface. The film is called ‘Yuba’ in Japan. Fresh 'Yuba' is not available in Melbourne where I live, but Chinese Dried ‘Yuba’ is available from many Asian grocery stores. It is a great ingredient for vegetarian dishes.

Ingredient

1/2 teaspoon

Grated Ginger

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Break Dried Yuba (Tofu Skin) into smaller pieces, soak in warm to hot water for 30 minutes OR until rehydrated and soft, then drain. *Note: It might take much longer time to rehydrate the compressed parts.

* Step 2

Prepare vegetables. Mix Potato Starch and Water in a small bowl.

* Step 3

Place Dashi Stock in a saucepan, add Carrot and softened Yuba, bring to the simmer over medium heat, and simmer a few minutes until Carrot is soft.

* Step 4

Add grated Ginger and Sesame Oil, and season with Salt, Soy Sauce and Mirin.

* Step 5

Add Shiitake Mushrooms and Spring Onion, then add Baby Spinach if you add some. These vegetables can be cooked very quickly. Gradually add Potato Starch mixture, but you don’t need to add all of it, and stir until the soup is thickened.

* Step 6

Half fill a bowl with warm Cooked Rice and cover it with the mixture.

A very popular Japanese rice bowl dish ‘Oyako’ Don is made with Chicken and Egg. This is a vegetarian version of ‘Oyako’ Don and I used the mince type Soy Meat. There is another vegetarian version which is made with 'Abura-age' (Thin Fried Tofu). This type of dish can be made with other protein such as Fish, Pork OR Beef, but always seasoned with Sugar, Mirin and Soy Sauce, which are the essentials for Japanese dishes.

Ingredient

2 tablespoons

Soy Sauce

1/2 tablespoon

Sesame Oil

1 tablespoon

Sugar

2 tablespoons

Mirin

Cooking instructions

* Step 1

Soak Dry Soy Meat in plenty of warm water for 30 minutes. Drain and squeeze to remove excess water, then soak in fresh water, drain and squeeze to remove excess water again. *Note: This process is to remove unpleasant smell from Soy Meat. It might be unnecessary, or you wish to repeat a few times.

* Step 2

Place Soy Meat in a bowl, add grated Ginger, Soy Sauce and Sesame Oil, mix to combine, and set aside.

* Step 3

Heat Oil in a frying pan over medium heat, cook Onion. When cooked, add all the Sauce ingredients, and bring to the simmer. Add Soy Meat, stir to combine, cover with a lid, and simmer for a few minutes.

* Step 4

Pour over lightly whisked Eggs, scatter Spring Onion, but DO NOT stir. Cover with the lid, and cook until the Egg is softly set.

* Step 5

Half fill a bowl with warm Cooked Rice, cover it with the mixture, and enjoy.

Fried Fish & Vegetable Rice Bowl

The Fish are seasoned with Salt & Pepper, fried and placed on top of the freshly cooked Rice. There are many sauces that go well with the Fish and Rice, but this is my favourite sauce. It is basically stir-fried Vegetables and Asian Mushrooms. Dashi stock is added and seasoned with Japanese staples, Soy Sauce and Mirin. Then thickened with Potato Starch (OR Corn Starch). This is a typical Japanese Rice Bowl Dish.

Ingredient

Carrot

Onion

1/2 tablespoon

Sesame Oil

2 tablespoons

Soy Sauce

1-2 tablespoons

Mirin

Cooking instructions

* Step 1

In a measuring jug or bowl, combine Dashi Stock, Soy Sauce and Mirin. You may wish to add Grated Ginger, Garlic OR Chilli Flakes. Add Potato Starch (OR Corn Starch) and mix well.

* Step 2

Prepare Vegetables. Cut all of them into bite-size slices OR strips.

* Step 3

Cut Fish Fillets into chunky bite-size pieces. Lightly season with Salt & White Pepper, thinly coat with Potato Starch OR Plain Flour, then fry. Deep-fry OR shallow-fry, which ever method you prefer. Transfer to a wire rack.

* Step 4

Heat Sesame Oil in a frying pan, cook Vegetables. As some Vegetables can be cooked very quickly, cook them accordingly. Season lightly with Salt & Pepper.

* Step 5

Mix the sauce once again, and add to the pan. Stir until sauce is thickened and all Vegetables are soft.

* Step 6

Half fill a bowl with Freshly Cooked Rice, place the fried Fish pieces on top, and cover with the Vegetables and the sauce.
