If you have ‘Ham, Egg & Lettuce’, you can make this simple rice bowl. Follow the recipe and stick to it. I am sure you will think the amount of Lettuce is too much, but it is not. The volume of the Lettuce will be reduced significantly when cooked, you might wish if you have added more.

Ingredient

Egg

1-2 slices

Ham *about 30g

Cooking instructions

* Step 1

Whisk Egg in a small bowl and season with Salt & White Pepper. Cut OR tear Iceberg Lettuce into chunky pieces, cut Ham into bite-size pieces, finely chop up Spring Onion. Prepare everything before you start cooking.

* Step 2

Heat Oil in a frying pan over medium hight heat, cook Egg quickly just like cooking ‘Scrambled Egg’. Transfer to the bowl that you used to whisk the Egg.

* Step 3

Add a small amount extra Oil to the pan and stir-fry Ham and Lettuce. Add Salt, I added 1/8 teaspoon, some White Pepper and Chicken Bouillon Powder, and stir. Return the Egg, and stir to combine.

* Step 4

Half fill a bowl with warm Cooked Rice and cover it with the mixture, add some finely chopped Spring Onion and Crispy Chilli Oil, drizzle with a small amount of Soy Sauce, and enjoy immediately.

When I stir-fry Harusame Noodles, I usually soak them in water before cooking. You don’t need to do that for this dish. This is a very simple, quick and easy recipe. Today I used 100g Lettuce, but you can add a lot more.

Ingredient

Eggs

1 teaspoon

Oil *plus extra

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

Cooking instructions

* Step 1

Whisk Egg(s) in a small bowl, and lightly season with Salt & White Pepper.

* Step 2

Combine all the Sauce ingredients in a small bowl. Prepare Prawns and Lettuce. You must prepare everything before you start cooking. Cooking process doesn’t take long at all.

* Step 3

Heat Oil in a frying pan, cook Egg(s) softly, return to the bowl. Add extra Oil if required, cook Prawns, then add Lettuce and lightly season with Salt and White Pepper. *Note: DO NOT overcook Lettuce.

* Step 4

Add the sauce. Tilt the pan and cook Harusame Noodles in the sauce, turning and stirring. When Harusame Noodles become soft and transparent, return the Egg, and mix to combine.

Sweet Chilli Prawns & Egg Rice Bowl

‘Sweet Chilli Prawns’ is a very popular dish and I have my own recipe, but it is much easier to cook if you use store-bought Sweet Chilli Sauce. Today I cooked it for my lunch and made it into this Rice Bowl. There is softly cooked Egg underneath the Prawns. It was yummy!

Ingredient

Egg

Oil *plus extra

2 tablespoons

Sweet Chilli Sauce

1/2 teaspoon

Soy Sauce

1 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

In a small bowl, combine all the Sauce ingredients.

* Step 2

Place shelled Prawns in a bowl, add 1 pinch Salt, White Pepper and Potato Starch, mix well, and set aside.

* Step 3

Finely chop up Onion and Garlic. Whisk Egg in a bowl and season lightly with Salt & White Pepper. Prepare everything before you start cooking.

* Step 4

Start heating a small frying pan over medium heat. Half fill a bowl with warm Cooked Rice while you are waiting the pan to heat up. Add Oil to the pan and cook Egg softly, then place the softly cooked Egg on the Rice.

* Step 5

Add some extra Oil to the pan, cook Onion and Garlic. When softened, add Prawns, and cook stirring and turning occasionally. *Note: If you use Spring Onion, cook Prawns first.

* Step 6

When Prawns are cooked, add the Sauce. When the sauce has thickened, it is done. Pour the Prawn mixture over the Egg and enjoy.

I use Lamb Chops for this Curry, but you can use boneless Lamb meat that is easy to eat. If you love Curry, you probably have a collection of Spices. Please use your own blend of Spices, but I use Japanese S&B Curry Powder. I use 1 tablespoon only, and the flavour is mild and children can enjoy it. Add more Spices if you like stronger flavour.

Ingredient

1 tablespoon

Oil *plus extra

1 tablespoon

Plain Flour

1 can (400 g)

Diced Tomatoes

Cooking instructions

* Step 1

Season Lamb Chops with Salt and Pepper.

* Step 2

Heat Oil in a large frying pan OR thick-base pot over high heat, brown the Lamb Chops, transfer to a plate, and set aside.

* Step 3

There should be enough Oil in the pan, but add some more if required. Lower the heat, and cook Onion and Garlic. When Onion is cooked, add Ginger, Curry Powder and Flour, and stir.

* Step 4

Add Tomatoes, Chicken Stock, Carrot, browned Lamb Chops and Bay Leaf. Bring to the boil, then lower the heat, cover with a lid, and simmer for 40 to 50 minutes, occasionally stirring.

* Step 5

Remove the lid and season with Salt. Add Garam Masala and Fruit Chutney if you add any. When the sauce is thickened, it’s ready. *Note: You may wish to add Ground Chilli for extra heat.

* Step 6

Serve with freshly cooked Rice. I served with Saffron Basmati Rice today. Turmeric Rice is also recommended.

Minced Meat & Veggies with Teriyaki Sauce

I used to cook this dish very often when my children were young. I was always very busy and this was one of the life-saving dishes. Minced Meat can be cooked very quickly, and also it is inexpensive. Any vegetables can be used. I used different sauces to season it, but I used Teriyaki Sauce most often because it was the easiest to make. You only need Sugar, Mirin and Soy Sauce, and you can add extra ingredients such as Garlic and Chilli for flavours.

Ingredient

1 tablespoon

Oil *plus extra

2 tablespoons

Sugar

2 tablespoons

Mirin

4-5 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Cut all Vegetables into the size that is easy to eat. Pre-cook some Vegetables if required.

* Step 3

If you use Eggplant, cook it first. Heat 1 tablespoon Oil in a frying pan over medium heat, cook until both sides are nicely browned, then transfer to a plate. You don’t need to cook it until very soft.

* Step 4

Add extra Oil in the pan, cook Minced Meat and Vegetables. When Vegetables are cooked, Minced Meat should be cooked by then. Return Eggplant. Add the Sauce and stir to combine.

* Step 5

Drizzle the Potato Starch mixture over and stir. It is to thicken the sauce. Serve immediately with freshly cooked Rice.
