Red Cabbage Salad with Sesame Dressing

Today I seasoned this Red Cabbage Salad with my Garlic Sesame Dressing, that I most frequently use fo salads. You can replace Garlic with Ginger, OR you may wish to use both. This Cabbage Salad can be a great side dish. Make it a few hours before you serve it, so that Red Cabbage will soften and the salad tastes better.

Ingredient

1 pinch

Salt

1 tablespoon

Soy Sauce

1/2 tablespoon

Sugar

2-3 teaspoons

Sesame Oil

Cooking instructions

* Step 1

Combine the Dressing ingredients in a mixing bowl. The amount of each ingredient is just a suggestion. Alter the amount to suit your taste.

* Step 2

*Note: I usually grind Sesame Seeds in Suribachi (Japanese Mortar), but you can grind Toasted Sesame Seeds using a plastic bag.

* Step 3

Thinly slice Red Cabbage and Red Onion. Cut Carrot into thin strips. Using vegetable slicers, the preparation is quick and easy. Add all vegetables to the Dressing in the mixing bowl, add 1 pinch Salt, and mix well to combine.

Scrumptious Pork Udon

Already cooked Udon Noodles are very handy to stock. I often use Cooked Udon to make my lunch. Today I had some thinly sliced Pork Belly which is also very handy to have as it can be cooked very quickly. Cook Pork in a frying pan while Udon is being heated in boiling water. This scrumptious dish can be made in five minutes.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Cut thinly sliced Pork into bite-size pieces and lightly season with Salt & White Pepper. Mix all the Sauce ingredients in a small bowl. Prepare all ingredients before you start cooking.

* Step 2

Heat Cooked Udon Noodles in boiling water.

* Step 3

Heat Sesame Oil in a frying pan over high heat, cook Pork pieces. When changed colour, lower the heat to medium, add the Sauce, and stir for a minute.

* Step 4

Drain the softened Udon Noodles, add to the pan, and stir to combine.

* Step 5

Place in a serving plate, add Egg Yolk on top, sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds. I added some Crispy Chilli Oil as well.

I looked for recipes for Quick Pickled Red Onion and I was disappointed with all of them. I don’t want to use a lot of Vinegar to pickle just 1 Onion. I don’t want to wait for several hours. Then, I ended up making this Instant Pickled Red Onion using a typical Japanese vinaigrette ‘Amazu’, that is made with Salt, Sugar and Vinegar. Super quick and easy, and tastes good to me.

Ingredient

1/2 teaspoon

Salt

1 tablespoon

Sugar

Cooking instructions

* Step 1

Thinly slice Red Onion in any direction you prefer. Using a vegetable slicer, it can be done easily. *Note: To reduce the spiciness, soak the sliced Red Onion in cold water, and drain well.

* Step 2

Add Salt and mix well. Then add Sugar and Vinegar. You can enjoy it straight away, but set aside for at least 10-15 minutes for better flavour.

* Step 3

Note: Ground Chilli OR Pepper can be added.

4 . Garlic Sesame Dressing

This salad dressing is probably the one I use most frequently. Any Salad Vegetables, Seaweed such as Wakame, Tofu, Egg, Konnyaku (Konjac), or even Noodles taste great with this dressing. I never make it in a large batch as it is so simple to make, but you can easily double the amount.

Ingredient

1 tablespoon

Soy Sauce

1/2 tablespoon

Sugar

1 teaspoon

Sesame Oil

1/2 clove

Garlic *grated

Cooking instructions

* Step 1

I usually grind Sesame Seeds in Suribachi (Japanese Mortar) first, then add all other ingredients and mix well. *Note: You can grind Toasted Sesame Seeds using a plastic bag.

5 . No-Mayonnaise Coleslaw

No-Mayonnaise Coleslaw

No Mayonnaise and No Dairy are needed to make this Coleslaw. This is an absolutely simple recipe, yet this Coleslaw is really good. It goes well with Asian dishes, Western dishes and other dishes in many different flavours.

Ingredient

1/4 teaspoon

Salt

1 tablespoon

Sugar

Cooking instructions

* Step 1

Finely slice Cabbage leaves and Carrot. Place into a large bowl, add Salt, mix well. Set aside while you are preparing other ingredients.

* Step 2

Add all other ingredients and mix well. *Note: Add extra Salt OR Sugar to suit your taste.

* Step 3

*Note: If the Cabbage is not so soft & juicy, allow to rest in the fridge for 1 hour. Mix again before you serve.

* Step 4

*The photo below is 1-day-old leftover Coleslaw that I mixed with Takuan (Pickled Daikon). I added some Toasted Sesame Seeds.
