Seasoned Kombu (Kelp), Cucumber & Tuna

The product of thinly sliced Kombu (Kelp) that looks like coated with Salt is sometimes called ‘Shio Kombu’ (塩昆布), Salted Kombu, in Japanese. The Kombu is most likely seasoned with Soy Sauce and Mirin. The salty Seasoned Kombu can be mixed with Rice OR Vegetables to make a variety of dishes. You really don’t need to season the dish because the Seasoned Kombu works as a seasoning. This very popular dish is one example.

Ingredient

1 pinch

Salt

1-2 teaspoons

Sesame Oil

Cooking instructions

* Step 1

Cut Cucumber into bite-size pieces, place in a mixing bowl, add 1 pinch Salt, and mix to combine. Add Seasoned Kombu (Kelp) and Sesame Oil, and mix to combine.

Add drained Tuna and roughly combine. Sprinkle with some Toasted Sesame Seeds and serve.

When I need to make one more dish for dinner, a simple salad is my first option. This Cucumber & Tuna Salad is quick & easy. I cut the Cucumber in a fancy way today, in the same way as Cucumber Snake.

Ingredient

1/4 teaspoon

Salt

1/2-1 tablespoon

Sugar

1 tablespoon

Soy Sauce

1 tablespoon

Rice Vinegar

1-2 teaspoons

Sesame Oil

Cooking instructions

* Step 1

Cut Cucumber in bite-size pieces. Sprinkle Salt and toss to combine, then set aside. *Note: The Cucumber in the above photo was cut in the same way as Cucumber Snake.

* Step 2

To make Dressing, toast Sesame Seeds in a saucepan until golden, then lightly grind until aromatic. Then add all other ingredients, and mix well.

* Step 3

Combine the Cucumber, drained Tuna and the Dressing. Serve immediately.

Here is another dish you can make with the humble Canned Tuna. This is a 'Mezegohan' dish. Rice and other ingredients are cooked separately and mixed together. You can actually use leftover cooked rice for this dish. In that case, you don’t need to cook anything. Just mix all ingredients. Anyone can make it.

Ingredient

2 tablespoons

Dry Cut Wakame

1 tablespoon

Soy Sauce

1 teaspoon

Sesame Oil

1 teaspoon

Sugar

Cooking instructions

* Step 1

Soak Dried Cut Wakame in cold water until soft, drain and squeeze to remove excess water. *Note: If Wakame pieces are large, break (or cut) into smaller pieces before soak.

* Step 2

Place the squeezed Wakame in a mixing bowl, add all other ingredients except for Spring Onion, and mix well.

* Step 3

Add warmed cooked Rice, and mix to combine. Sprinkle with some Spring Onion and enjoy. *Note: Spring Onion can be mixed in if you prefer.

If you are doing financially tough, stock Canned Tuna. You can cook loads of delicious and nutritious dishes with it. Have a look at the list of ingredients below. I believe most people have them all. This rice dish can be cooked with those staple ingredients and won’t cost much at all.

Ingredient

1-2 teaspoons

Soy Sauce

1 tablespoon (15 g)

Butter *cut into small cubes

1 tablespoon

Curry Powder

Cooking instructions

* Step 1

Wash Rice, drain the water, and place into the rice cooker’s inner pot.

* Step 2

Add Chicken Stock and Soy Sauce, and stir. Add Butter and sprinkle with Curry Powder. Then scatter Onion, Tomato and coarsely flaked Tuna. DO NOT stir.

* Step 3

Press ‘COOK’ button to start cooking. When the rice is cooked, add Peas, and let it steamed for 10 minutes. Then mix gently. Add extra Salt & Pepper if required.

‘Goma-ae’ is a dish of vegetables dressed with sweet sesame seed sauce. ‘Goma-ae’ is one of the most popular recipes on my website. Today I added a small can of Tuna. I have never done it before. The result was brilliant! As I seasoned Cucumber with Salt, I reduced the amount of Soy Sauce in the sauce.

Ingredient

1/4 teaspoon

Salt

1 tablespoon

Sugar

Cooking instructions

* Step 1

Cut Cucumber in bite-size pieces. Sprinkle Salt and toss to combine, then set aside. *Note: Today I cut the Cucumber in Snake cut.

* Step 2

To make ‘Goma-ae’ sauce, toast Sesame Seeds in a saucepan until golden, then grind until aromatic. Do not over grind. Then add Sugar and Soy Sauce, and mix well. *Note: A little bit of Chilli or/and grated Ginger can be added.

* Step 3

Combine Cucumber, drained Tuna and ‘Goma-ae’ Sauce.
