I often make this simple salad with ‘Ponzu’. Today I used leftover Boiled Soy Beans, but sometimes I use Edamame Beans. The other day I added Crispy Chilli Oil that I have been crazy about, and I was totally impressed with the improvement in the flavour. Crispy Chilli Oil makes anything taste better. I used ‘Lao Gan Ma’ brand Crispy Chilli Oil, which is not very spicy. If you like very spicy food, add some hot Chilli.

Ingredient

1 pinch

Salt

1/2 tablespoon

Toasted Sesame Seeds

Cooking instructions

* Step 1

Cut Cucumber and Carrot into small pieces, place in a mixing bowl, add 1 pinch Salt, mix to combine.

* Step 2

Add Cooked Soy Beans and all other ingredients, and mix well. Enjoy immediately.

I have been crazy about ‘Lao Gan Ma’ brand Crispy Chilli Oil lately. I am using it for very many things. It seems it is not spicy enough for some people, but probably that’s the reason why I enjoy it so much. Today I mixed it with ‘Ponzu’ to make a sauce and dressed Cucumber and ‘Abura-age’ (Fried Thin Tofu) with the sauce. It is Vegan, but of course you can replace ‘Abura-age’ with Chicken OR other protein. This was supposed to be 2 servings, but I ate all of it.

Ingredient

Cooking instructions

* Step 1

Cut Cucumber into bite-size pieces. I cut it diagonally as I was rotating it on a cutting board. Place in a mixing bowl, add 1 pinch Salt and mix, and set aside.

* Step 2

Cut 1 sheet Abura-age (Fried Thin Tofu) into bite-size pieces. Cook in a frying pan over medium low heat until nicely browned and crispy.

Add ‘Ponzu’ (OR Soy Sauce & Rice Vinegar), Crispy Chilli Oil and Spring Onion to Cucumber, and mix well. Add ‘Abura-age’ and combine.

* Step 4

Sprinkle with Toasted Sesame Seeds and enjoy.

Pan-fried Pork and Egg can be a great dish. As I always eat it with freshly cooked Rice, I made it into a rice bowl today. The sauce I used today was one of my favourites, a mixture of Soy Sauce and Oyster Sauce. It’s super easy to make. I often add a small amount of Sesame Oil to it, but today I added Crispy Chilli Oil, that is my current craze.

Ingredient

1/2 tablespoon

Oil

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Prepare all ingredients and seasonings ready to use before you start cooking.

* Step 3

Heat Oil in a frying pan over medium high heat, cook Pork and Garlic until Pork is slightly browned. Season lightly with Salt and White Pepper.

* Step 4

Pour the whisked Egg over the Pork, and gently stir to combine, and remove from the heat. DO NOT overcook the Egg.

* Step 5

Half fill a bowl with warm Cooked Rice and cover it with the Pork and Egg mixture. Sprinkle with some finely chopped Spring Onion, drizzle with the sauce, and enjoy.

Crispy Chilli Oil is now one of my Must-Haves. It’s not very hot, that’s why I can enjoy it very much with anything. ‘Crispy Chilli Oil Chicken’ can be made instantly by mixing some leftover Cooked Chicken and Crispy Chilli Oil. This ‘Cucumber & Cream Cheese’ is the same. I just mixed Cucumber and Cream Cheese with Crispy Chilli Oil. It would be a great ‘Otsumami’, that is a Japanese term for simple dishes OR snacks to enjoy with alcoholic drinks. Chilled white wine would be lovely, but I just ate it as a snack today.

* Step 1

Cut Cucumber into bite-size pieces. I cut it diagonally as I was rotating it on a cutting board.

Add 1 pinch Salt and mix to combine, then add Cream Cheese and Crispy Chilli Oil, and gently combine. Serve immediately as water would come out from Cucumber.

‘Lao Gan Ma’ brand Crispy Chilli Oil is very popular among the Chinese food enthusiasts. It is available internationally. In Melbourne where I live, even ordinary supermarket stores sell it. This Crispy Chilli Oil is not very spicy and can be used as a seasoning. Today I mixed some leftover Roasted Chicken with the Crispy Chilli Oil, and enjoyed it with Soba Noodles. If you have ‘Mentsuyu’ (Japanese Noodle Dipping Sauce), which can be made easily, this dish is super quick & easy to prepare.

* Step 1

Tear OR cut Cooked Chicken into the size that is easy to eat. Today I used leftover Roasted Chicken. Add Crispy Chilli Oil and mix to combine. If the Crispy Chilli Oil needs more Oil, add a little bit of Sesame Oil.

* Step 2

Cook Soba Noodles as instructed. Basically cook noodles in rapidly boiling water for 3 to 4 minutes OR until cooked ‘al dente’. Then drain, rinse in cold water, and drain well.

* Step 3

Place cold Soba noodles in a bowl, arrange Chicken and Boiled Egg on top, pour some ‘Mentsuyu’ sauce, sprinkle with some finely chopped Spring Onion and shredded Toasted Nori, and enjoy.
