This recipe was a result of an accident. First it started when I tried to make my ‘Very Sweet American Style Chewy Choco Chip Cookies’. I believed that I had a bag of Chocolate Chips, but I didn’t. So I added Peanuts instead. Because I added Peanuts, I added some Peanut Butter as well. The dough became very sticky and I added extra Flour. The Cookies swelled a lot and all cookies stuck to each other. It was disastrous, but the cookies were wickedly yummy! I wrote down how I made them and tried the recipe again today. Wickedly yummy!!!

Ingredient

1/2 cup

Brown Sugar

1/4 teaspoon

Salt

1/2 teaspoon

Bi-carb Soda

Cooking instructions

* Step 1

Place Butter and Peanut Butter, in a heat-proof bowl, and heat in the microwave until Butter melts. Add Brown Sugar, Caster Sugar and Salt until smooth using a whisk. Beat in Egg and Vanilla, and mix well until creamy.

* Step 2

Add Self-Raising Flour and Bi-Carb Soda, and mix well. Then add Peanuts and combine evenly. *Note: If the dough is too soft to roll, leave it in the fridge until firm enough OR add extra 1-2 tablespoons Flour.

* Step 3

Preheat oven to 170℃. Line 2 baking trays with baking paper.

* Step 4

Roll the dough into 24 balls, press down into flat discs, and place them on the prepared trays, 12 pieces on each tray. Be aware these cookies will expand.

Bake for 12 to 15 minutes OR until golden. Leave them on the trays for 5 minutes, then carefully transfer to a wire rack and cool.

When I have ripe Bananas, I wait for a few more days until they turn very dark and smell almost fermenting. Then I make ‘My Legendary Banana Cake’, always the same cake. Today I wanted to make something different, so I decided to add Cocoa Powder and Chocolate Chips to it. I increased the amount of Butter a little bit. The result was excellent!

Ingredient

1/2 cup

Caster Sugar

1 tablespoon

Rum

1/3 cup

Cocoa Powder

1 teaspoon

Bi-Carb Soda

Cooking instructions

* Step 1

Preheat oven to 170C. Line the base and sides of a loaf tin with baking paper.

* Step 2

Beat Butter and Sugar in a bowl until pale and creamy. Add Eggs, 1 at a time. Add mashed Banana and Rum, and mix well.

* Step 3

Mix Self-Raising Flour, Cocoa Powder and Bi-Carb Soda, and sift in and stir. Finally add Dark Chocolate Chips and combine well.

* Step 4

Spoon into the prepared loaf tin and smooth the surface. Bake for 50 to 60 minutes or until cooked through. Allow to cool on a wire rack.

Serve warm or cool with soft whipped Cream.

Super Easy Chocolate Cake

I have tried quite a few different recipes but I have never come across any recipes easier than this one. Nigella Lawson said every home cook should know at least one chocolate cake recipe. Well… this is the one I know.

Ingredient

1/2 teaspoon

Bi-Carb Soda

1/3 cup

Cocoa Powder

1 cup

Sugar

1 teaspoon

Vanilla Extract

Cooking instructions

* Step 1

Preheat the oven to 180°C. Line the base of a cake tin with baking paper and grease the sides.

* Step 2

Use a whisk to mix and blend all dry ingredients in a large bowl. Add wet ingredients and mix very well until the texture is like chocolate mousse.

* Step 3

Pour the mixture into the prepared cake tin and bake for 40 to 50 minutes OR until cooked through. Stand for 5 minutes before turning out onto a wire rack to cool.

* Step 4

I sliced the cooled cake in half and sandwiched Chocolate Ganache for the above photo. *Note: Chocolate Ganache can be easily made by mixing dark chocolate and warmed cream.

When I find apples getting dry and spongy in my fruit bowl, I often make these cupcakes. (Naturally, you can make these cupcakes using fresh Apples!) Because of the plenty of grated apple, these cakes are so moist even after a few days, only if they last that long.

Ingredient

1/3 cup

Cocoa Powder

1 teaspoon

Bi-carb Soda

2/3 cup

Brown Sugar

1/2 cup

Sultanas

Cooking instructions

* Step 1

Preheat oven to 180°C. Line a 12-hole muffin pan with cases.

* Step 2

Combine and shift dry ingredients. Add Eggs, Oil (or Butter) and grated Apples, and mix well. *Note: If you use only 1 or 2 Apples, add some Milk to soften the batter.

* Step 3

Spoon the mixture into each case and place some chopped/sliced nuts. I used Almond Flakes this time.

* Step 4

Bake for 20-25 minutes or until cooked through. Leave in tins for 5 minutes before moving onto wire rack to cool.

This 'Black Forest Cake' has been one of my family’s TOP 3 desserts for special occasions. My husband and children all love this cake. ‘Black Forest Cake’ is such a popular cake and you can find so many different recipes on the internet and cooking books, but my recipe is fairly easy and fuss-free.

Ingredient

1 teaspoon

BC Soda

1/3 cup

Cocoa Powder

1 cup

Sugar

1 teaspoon

Vanilla Extract

400-600 ml

Thickened Cream

2 tablespoons

Kirsch

Cooking instructions

* Step 1

Bake a chocolate cake 18cm OR 20cm in diameter. My ‘Super Easy Chocolate Cake’ recipe can be found here. (http://www.hirokoliston.com/super-easy-chocolate-cake/) Turn onto a wire rack to cool completely, then cut horizontally into 2 or 3 layers using a large serrated knife.

* Step 2

Drain the pitted cherries, reserving 1/4 cup of the juice. Reserve 12 good-looking cherries for decoration.

* Step 3

Use an electric beater or a whisk to beat cream in a large bowl until firm peaks form. *Note: You may wish to add 1 tablespoon Caster Sugar to the cream before beating. I always add NO sugar to the cream.

* Step 4

Mix reserved cherry juice and Kirsch in a small bowl.

* Step 5

Place 1st layer of cake on a serving plate and drizzle over the kirsch mixture. Spread the cream and arrange the cherries evenly. Repeat if you have three layers. Then finish with the top layer of the cake.

Spread some cream over the top (and side of the cake if you wish). Decorate the cake with the remaining cream, cherries and shaved dark chocolate.
