I have one Basic Cookie Dough recipe that I have been using for decades. I don’t need to know other recipes because this recipe works for me and I like the sweetness and texture of this cookie dough. You can add extra ingredients to this dough and make many different cookies. Possibilities are endless. Today I added Dried Cranberries and White Chocolate Chips, which were quite sweet. I could have reduced the amount of Sugar even though I added only 1/2 cup, that was 80g. Many recipes require 120g or 150g or more Sugar. I can’t stand the extreme sweetness.

Ingredient

1/2 cup

Caster Sugar

1 teaspoon

Vanilla Extract

Cooking instructions

* Step 1

Beat softened Butter and Sugar until smooth and well combined. Beat in Egg and Vanilla, and mix well until creamy. Add Flour and mix well, then add White Chocolate Chips and Dried Cranberries, and combine evenly.

* Step 2

Roll the dough into 24 balls, about 3cm size, and place on the tray(s) lined with baking paper.

Bake in the preheated oven at 180℃ for 15 to 20 minutes. Cool on a wire rack.

I saw Fruit Mince stuffed roll cookies on the internet. The picture inspired me to make these ‘Tsubu-an’ (Sweet Azuki Paste) & Walnuts stuffed cookies. I added Matcha Powder to the dough because Matcha and ‘Tsubu-an’ go very well together. To keep the Matcha colour, not to brown the cookies, I recommend to bake at a lower temperature.

Ingredient

1/2 cup

Caster Sugar

1 pinch

Salt

1

Egg

1 tablespoon

Matcha Powder

Cooking instructions

* Step 1

Beat softened Butter, Sugar and Salt until smooth. Beat in Egg, add sifted Matcha Powder, and mix well. Add Flour and mix to form soft dough.

* Step 2

*Note: This dough is probably too soft to work with. Divide into 4 even portions, cover with a plate or lid, and refrigerate for 20 minutes OR until slightly firm.

* Step 3

Meanwhile, lightly roast Walnuts, finely chop them up, and mix with Tsubu-an (Sweet Azuki Paste).

* Step 4

On a lightly floured surface (OR a sheet of baking paper), roll each portion into about 11cm x 22cm rectangle. Spread 1/4 of filling on each rectangle, and carefully wrap up. *Note: Patch any tears and cracks.

* Step 5

Wrap each roll with plastic food wrap and leave in the fridge until firm.

* Step 6

Preheat oven to 160°C. Line a large baking tray (OR 2 trays) with baking paper.

* Step 7

Cut each roll into 8 pieces (OR 6 pieces), place on the prepared baking tray, seam-side down, and bake for 25 to 30 minutes. Transfer to a wire rack and cool.

I used to make 'Gingerbread Characters' with my children quite often when they were young. It was a fun family activity. Now, I don’t remember when was the last time I made Gingerbread.

Ingredient

1 teaspoon

Ground Ginger

1 teaspoon

Ground Cinnamon

Cooking instructions

* Step 1

Preheat oven to 180℃. Line 2 baking trays (OR 1 large baking tray) with baking paper.

* Step 2

Beat softened Butter and Brown Sugar until smooth and well combined. Beat in Egg and mix well. Add Flour and spices, and mix to form a dough.

* Step 3

Roll the dough into 24 balls and place on the prepared tray(s). You may wish to press down slightly.

* Step 4

Bake for 15 to 20 minutes or until golden and cooked through. Transfer to a wire rack and cool.

The filling of Dates & Walnuts can be replaced with Chocolate, Crunchy Peanut Butter, OR etc. Making these cookies can be a fun family activity, though it might be too difficult for young children.

Ingredient

1/2 cup

Caster Sugar

1

Egg

2 tablespoons

Hot Water

2 tablespoons

Brown Sugar *optional

Cooking instructions

* Step 1

Place finely chopped Dates in a small bowl, add Hot Water and Brandy (OR Rum), and mix well. Set aside for a while.

* Step 2

Finely chop up Walnuts. Add Brown Sugar (*optional) and Walnuts to the softened Dates, and mix to combine.

* Step 3

In a separate mixing bowl, beat softened Butter and Sugars until smooth and well combined. Beat in Egg, add Coffee and mix well. Add Flour and mix well to form soft dough.

* Step 4

Preheat oven to 180℃. Line 2 baking trays with baking paper.

* Step 5

Roll the dough into 24 balls. Form each ball into a cup, place 1/2 teaspoonful the filling, and close into a ball. Gently flatten into a disc. *Note: If the dough is too soft to handle, allow to cool in the fridge to firm up.

* Step 6

Place 12 discs on each prepared tray, closed side down. Bake for 15 minutes or until golden and cooked. While the cookies are still hot, carefully press down slightly. Transfer to a wire rack to cool.

I baked these ‘Choco Chip Cookies’ regularly when my children were young. The amount of Caster Sugar used to be 1/2 cup, but I reduced to 1/4 cup because of my daughter’s health consciousness. Today I baked them for the first time in many years and ‘Wow!’ the smell of the cookies have brought back their childhood memories.

Ingredient

1/4 cup

Caster Sugar

1/4 cup

Brown Sugar

1 teaspoon

Vanilla Extract

Cooking instructions

* Step 1

Preheat oven to 180C. Line 2 baking trays with baking paper.

* Step 2

Beat softened Butter, Caster Sugar and Brown Sugar until smooth and well combined. Beat in Egg and Vanilla, and mix well.

* Step 3

Add Flour and mix well, then add Chocolate Chips and combine evenly.

* Step 4

Roll the dough into 24 balls, about 3cm size, and place on the prepared trays, 12 balls each. You may wish to press down but it is not necessary.

* Step 5

Bake for 15 to 20 minutes or until golden and cooked through. Transfer to a wire rack to cool.
