1 . Pork Mince Katsu

Tonkatsu, the Japanese dish of Panko-crumbed and deep-fried Pork Cutlet, is very popular. This is the almost same thing, but it is made of Pork Mince. You can use just Pork Mince, but I always add finely chopped Onion and other ingredients. When my children were young, I added other Vegetables as well. It was a good trick to make my son eat Vegetables.

Ingredient

Salt

1/2 teaspoon

Ground Black Pepper

2 tablespoons

Plain Flour

2-3 teaspoons

Cooking instructions

* Step 1

Combine Pork Mince, finely chopped Onion, ‘Panko’ Breadcrumbs and Egg. Season with Salt & Pepper and form into 8 patties.

* Step 2

Coat the patties with Plain Flour very well, then coat with whisked Egg, and finally coat with ‘Panko’ Breadcrumbs.

* Step 3

Heat Oil to 160 to 170℃ and fry until cooked through and golden, place on a rack and drain the Oil.

* Step 4

Enjoy with ‘Tonkatsu’ Sauce. To make Mock ‘Tonkatsu’ Sauce, combine all ingredients. You can add a small amount of Lemon Juice, Chutney, Mustard or grated Ginger for extra flavour.

This rice bowl dish is called ‘Sauce Katsu Don’ in Japan. ‘Katsu’ is crumbed and fried meat, and ‘Tonkatsu’ (Pork Cutlets) is popularly used. Today I used Crumbed Fried Fish. This dish was my youngest sister’s favourite when she was a young girl. To encourage her to study harder, my mother offered her that she would cook this dish whenever she achieved perfect 100% score in school tests. I remember that happened a few times.

Ingredient

2-3 teaspoons

Cooking instructions

* Step 1

Cook Tonkatsu (Pork Cutlets), Chicken Katsu (Chicken Cutlet), OR Crumbed Fried Fish. They can be cooked in the same way. Season Pork Chicken OR Fish with Salt & Pepper, coat with Flour, then Egg, and finally with ‘Panko’ Breadcrumbs. And fry in the oil at 170 to 180℃ until cooked and golden.

* Step 2

Cut ‘Kastu’ into bite-size pieces if large.

* Step 3

To make ‘Tonkatsu’ Sauce, combine all the sauce ingredients.

* Step 4

Half fill a bowl with Freshly Cooked Rice, cover with finely sliced Cabbage, place ‘Katsu’ on top and drizzle with ‘Tonkatsu’ Sauce.

On the other day I cooked ‘Pork & Beans’ replacing Pork with Chicken, and it was delicious. If you don’t eat Pork with any reasons, you may wish to try this ‘Chicken & Beans’. Today I added more Vegetables including Celery, and Tabasco for a little kick in the flavour, and this dish turned out absolutely divine!!!

Ingredient

2 tablespoons

Plain Flour

1-2 tablespoons

Butter OR Vegetable Oil

1 stalk

Celery

1 can (400 g)

Tomatoes

2-4 tablespoons

Tomato Ketchup

Cooking instructions

* Step 1

Prepare vegetables. Cut Onion, Carrot and Celery into small pieces.

* Step 2

Lightly season Chicken pieces with Salt & Pepper, then coat with Plain Flour. Heat Butter (OR Oil) in a casserole pot over medium heat, cook Chicken.

* Step 3

When Chicken pieces are browned, add Garlic and other vegetables, and stir-fry for a few minutes.

* Step 4

Add Sake (Rice Wine) OR White Wine and stir, then add Tomatoes, Chicken Stock and Bay Leaf. Cook for 15-20 minutes until vegetables are soft, stirring occasionally. Add Ketchup, Worcestershire, Tabasco OR Chilli that is optional, and season with Salt & Freshly Ground Black Pepper.

* Step 5

Sprinkle with some finely chopped Parsley and enjoy with crusty bread OR chips (fried potatoes).

4 . ‘Tonkatsu’ Sauce

‘Tonkatsu’ Sauce

‘Tonkatsu’ (Pork Cutlets) and ‘Chicken-katsu’ (Chicken Cutlets) are often served with ‘Tonkatsu’ Sauce. ‘Tonkatsu’ Sauces are available from some Asian grocery stores, but it you can’t find it, why don’t you make it.

Ingredient

2 tablespoons

Tomato Ketchup

1-2 teaspoons

Sugar

1-2 teaspoons

Soy Sauce

Cooking instructions

* Step 1

Combine all ingredients. You can add a small amount of Lemon Juice, Chutney, Mustard or grated Ginger for extra flavour.

I first cooked this dish for my children when they were young, and it is sweet and not spicy. For grown-ups, I recommend to use less Ketchup and add Chilli or Tabasco. You may wish to add Coriander or Parsley as well, but I used to hesitate to add any green leaves because one of my children wouldn’t eat if green bits were there!

4 tablespoons (1/4 cup)

Tomato Ketchup *OR less

Cooking instructions

* Step 1

Lightly season Pork pieces with Salt & Pepper, then coat with Plain Flour. Heat Oil in a casserole pot over medium heat, cook Pork. When Pork pieces are browned, add Garlic and Onion, and stir-fry for a few minutes.

* Step 2

Add White Wine (OR Water) and stir, then add Tomatoes, Bay Leaf and Beans. Cook for 15 minutes, stirring occasionally. Add Ketchup and Worcestershire, Chilli or Tabasco that is optional, and season with Salt & Freshly Ground Black Pepper.
