Just like using pesto on pasta as a sauce, I used my Edamame & Avocado Dip to mix with spaghetti. Wow! It was absolutely delicious. This will be my family’s favourite. The flavour is quite simple. So you may wish to add more sourness or spiciness to it. I actually drizzled some soy sauce over it. That’s my favourite!

Ingredient

1 tablespoon

Lemon Juice

Cooking instructions

* Step 1

Cook Spaghetti in a large saucepan of salted boiling water as instructed.

* Step 2

Place all the sauce ingredients in a food processor or blender and process until smooth.

* Step 3

Mix the Edamame & Avocado sauce with the cooked spaghetti.

* Step 4

Add your favourite topping to it, such as freshly cracked Black Pepper and shaved Parmesan Cheese. I recommend Soy Sauce!

‘Edamame’ are young soy beans. Soybeans in the pod are usually blanched in salted water. ‘Edamame” are becoming easily available from most supermarkets and Asian grocers. Crunchy and tasty, and above all nutrition packed ‘Edamame’ can be eaten directly from pods but they are great for cooking as well.

Ingredient

Place all ingredients in a food processor or blender and process until smooth.

Many Japanese words have been imported to English but often pronounced differently. ‘Edamame’ (the young soy beans) is one of them. It’s ‘e-dʌ-ma-me’ and NOT ‘e-dʌ-ma-miː’. When a word ends with ‘e’, English speaking people pronounce wrong. ‘Shiitake’ and ‘Sake’ are other examples. Please remember ‘e’ in Japanese words is always pronounced like ‘e’ in ‘bed’.

Ingredient

1 pinch

Salt

2 tablespoons

Sake

1 tablespoon

Potato Starch

Cooking instructions

* Step 1

Prepare prawns. If large ones, cut them in half. Finely chop up white part of Spring Onions. Cut Tofu into bite-size cubes.

* Step 2

Place all the sauce ingredients in a mixing bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.

* Step 3

Heat Oil in a large frying pan or a wok, cook Prawns, Spring Onions and Ginger.

* Step 4

Before you add the sauce mixture into the pan, mix it well again. Then pour in the sauce mixture and bring it to boil and let it thicken.

* Step 5

Add Tofu and Edamame gently mix and combine. Salt & White Pepper if required.

4 . Prawn & Edamame Tofu Balls

Prawn & Edamame Tofu Balls

There is a vegetarian food called ‘Ganmodoki’ which means ‘mock wild-goose meat’. It’s a fried tofu fritter made with vegetables and sesame seeds. This ‘Tofu Balls’ is not vegetarian food as I used prawns and egg but very similarr to ‘Ganmodoki’. Firm Tofu is recommended as it is quite dry. If you used Momen tofu or soft tofu, you must press-drain them very well to remove water.

Ingredient

500 g

Tofu

1 teaspoon

grated Ginger

1/2 teaspoon

Salt

2 teaspoons

Mirin

1 teaspoon

Soy Sauce

1

Egg

2 tablespoons

Potato Starch Flour

Cooking instructions

* Step 1

Break down and mash Tofu, add other ingredients and make it into paste texture.

* Step 2

Add Edamame and Prawns and combine well. Divide the mixture and make flat balls.

* Step 3

Heat deep frying Oil to around 180C and fry the tofu balls for 4 to 5 minutes or until nicely browned.

5 . Squid & Edamame Patties

In Japan, I used to enjoy many traditional food made from fish such as ‘Chikuwa’, ‘Kamaboko’, ‘Fish Sausages’, etc. One of my favourite is deep-fried fish patties with squid pieces in them. The only way for me to eat them now is making them by myself. One day I reluctantly tried and discovered it is actually very easy thanks to my food processor. If you have one, try this great looking dish. It doesn’t take long and so easy to cook and delicious.

Ingredient

Cooking instructions

* Step 1

Clean Squid and Fish Fillet, cut into small pieces and place them in a bowl of a food processor. Add a pinch of Salt and Pepper, and process until paste-like texture is achieved, but do not over process until too smooth.

* Step 2

Transfer the mixture to a large bowl, add Edamame and combine well.

* Step 3

Heat small mount Oil in a frying pan over a medium heat. Put some Oil on your hands so the mixture won’t stick, make 5cm size patties and cook on the frying pan until golden and cooked though.

* Step 4

Serve with your favourite dipping sauces. I recommend ‘Sweet Chilli Sauce’, ‘Ponzu’, ‘Thai Dipping Sauce’ or ‘Garlic Soy Sauce’.
