These were my favourite cookies when I was a kid, packed with nuts and chocolate. I found this free-from friendly version online from the Minimalist Baker and have tweaked it a little to suit whatever ingredients are at home.

Ingredient

sugar

1/2 tsp

baking soda

1/2 tsp

salt

1/2 cup

rolled oats

Cooking instructions

* Step 1

Preheat the oven to 176 C (350 F). Line two baking sheets with parchment paper.

* Step 2

Make flax egg by mixing ground flaxseeds with water, let sit for 5 minutes to set.

Add melted oil/butter, sugar and vanilla. Add flax egg and mix until smooth.

Add almond flour, GF flour, baking soda and salt and mix with a wooden spoon or spatula until a dough forms.

Fold in chopped nuts, oats, chocolate, and coconut until combined. If the mixture is too crumbly, I add another tablespoon or two of peanut butter.

Form into balls and arrange on the prepared baking sheets, then press them into disks. Bake for 12-15 minutes until golden brown.

Ingredient

cinnamon

Cooking instructions

* Step 1

Blend bananas, peanut butter, vanilla, cinnamon until thoroughly mixed

* Step 2

Fold in flour, powder and chips

* Step 3

Blend until just mixed, do not over mix

* Step 4

Fry in skillet or on electric griddle a few minutes each side until golden brown

I love to make cashew cheese because it has the same fat contents as dairy cream. It is rich and filling like dairy cheese, and very tasty. It develops a crust when kept in cheesecloth and stays soft and fresh for months. I just keep an eye on worldwide child labor used to harvest cashew nuts, it worries me. I am willing to pay more for cashew nuts if there was global certification. Wintercarrots are delicious when grilled with cheese. They make a full and filling dinner with lemon pepper harissa and garlic confit oil. Here is how I make it.

* Step 1

Scrub unpeeled carrots, cut in 1/4” sticks, 4” long. Boil 20 minutes with seasalt till sweet and al dente. Taste, should be sweet but still crunchy and crisp.

* Step 2

Grill carrot sticks to develop a crust. Turn broiler on in oven to 450F degrees, bake a gold crust on the carrots, four minutes, turn, four minutes other side. Cut cashew cheese in 1/4” sticks, 4” long, add to carrots, add harissa sauce.

Turn oven down to 350F degrees, melt cheese, about 6 minutes. Toss carrot sticks, lemon pepper harissa sauce and molten cashew cheese. Garnish dish with fresh mint leaves, serve.

It started like a frittata, but the ratio wasnt good so it ended up as a new, very delicious, low calorie dish,roughly 1000 calories, and im planning to eat this in the morning,as the only meal of the day

* Step 1

Put the frozen broccoli into boiling water, bring it to a boil again, and cook for 4 minutes more.

* Step 2

Mix the eggs with the salt, chopped onions and vegan mozzarella

* Step 3

Heat oil in a pan, add the boiled broccoli and the eggs mixture, stir until done, enjoy

* Step 1

Peel the kohlrabi, celeriac, apples and cut them into small cubes, cut the tofu into cubes too

* Step 2

Heat oil in a pan and fry the veggies with the tofu and all the spices and salt, stir often, fry it on high temperature

* Step 3

Before the veggies would burn, star gradually adding 1 cup water, as many times as needed, this way you get a gravy, let it cook in the gravy, the more time u let it cook the better it will taste,make sure the veggie cubes get soft, the tofu might even fall apart that makes the gravy even tastier. I kinda let it cooj for long while checking Cookpad, it turned out really tasty. vegan and weight loss dish
