This is an Asian-inspired dish that is a family favorite. It can be prepared fairly quickly, and will disappear from your family’s plates equally quickly. 😁 This recipe is modified from the Food Network. #GlobalApron - Week 9 - Pineapple #Dinner #Savory #Asian #Meat

Ingredient

4 teaspoons

baking soda

3/4 cup

diced onion

1 Tablespoon

fresh minced garlic

1/3 cup

hoisin sauce

1/3 cup

soy sauce

1/4 teaspoon

ground ginger

2-3 teaspoons

cornstarch

Cooking instructions

* Step 1

If using a fresh pineapple, cut it into small pieces and then dice enough to obtain 1 cup. Save the rest for garnish or to eat as a snack.

Trim the excess fat off the chicken breasts and cut them into bite sized pieces. Place the pieces into a bowl and sprinkle them with 4 teaspoons baking soda. Let sit at room temperature for about 20 minutes.

Rinse the chicken well to remove the baking soda, then gently pat it dry with paper towels. Season it with salt and pepper.

Sauté the chicken in a a few teaspoons of olive oil until it is browned on all sides and cooked through. Work in batches and don’t crowd the pan. This will help the chicken brown evenly.

Transfer the chicken to a fresh plate, and continue cooking until all the chicken is done.

Dice the onion and red bell pepper, and sauté in a few teaspoons of olive oil until softened and translucent. Add the garlic and sauté for one more minute. Set aside.

In a medium saucepan, whisk together the sauce ingredients: pineapple juice, soy sauce, chicken stock, hoisin sauce, ginger, and brown sugar.

Bring the mixture to a boil, then reduce heat and cook until the mixture has reduced to about 1 and 1/2 cups. (It’s okay if it’s not exact). Add the cornstarch, and continue cooking and stirring until the sauce thickens and becomes slightly syrupy.

* Step 9

Transfer everything (chicken, onion, bell pepper, sauce) back into the skillet. Add the diced pineapple. Stir and cook until everything is well coated and heated through.

Serve over rice, sprinkled with the chopped cashews and some leftover pineapple. I like to use sticky rice. 🍚 😋 If you want to get fancy, you can serve the chicken and rice in a carved out pineapple half.

Notes: 🍍 You can use chicken thighs instead of chicken breasts if you prefer. 🍍 I advise checking the nutritional label of the Hoisin sauce you purchase. Some have way more sugar than others! You don’t need all that extra sugar. Let the flavor of the pineapple shine through. 🍍The original recipe called for 1/2 cup brown sugar, but I reduced it to 1/3 cup. To be honest, you could probably decrease it a little further.

🍍 if you want to break up the work, you could slice up the pineapple and mix the sauce ingredients together, then refrigerate these ingredients overnight. Proceed with the recipe the next day.

Salty cake or Tuzlu Cake in Turkish language is quite popular in the tea time menu. Quick and easy to make, but it’s yummy. For the tea time, lunch box snack for the kids also sometimes in our family we eat it as a supper.

Ingredient

3/4 cup

veg oil

1-1 1/3 cup

flour

* Step 1

Clean and dice the onion, potato, and carrot. Chop the fresh dill (I used mint today, as o don’t have dill at home) keep aside.

Crack and whisk the eggs using hand whisk. Add yogurt, then add oil continue to whisk it.

Then add the flour, mix it gently, add salt, white pepper, and baking powder. Then add the diced vegetables, mix it using spatula.

Add the shredded melted cheese, cheddar cheese, and scramble feta. Mix it gently. Grease the tray and pour the batter. Bake it for 45-50 minutes.

Heat a small sauce pan on a medium heat, pour 3 table spoon of olive oil. Stir fry shallots and garlic until crispy. Drain the excess oil, put aside.

Anyone fans of the bitter melon? The greenish, elongate, ugly wrinkled vegetable that not everybody like it. But when you know how to cook it right, this bitter melon can be a favorite dish ever. I loved this vegetable since I was little. My mom cooked it often for us. Today I was craving for this bitter delicious tasty bitter melon. Usually I sautéed with dry anchovies. But today I made it with salty eggs. It turns out so yummy, and my hubby ate it too without complaints “bitter”😀 Okay, let’s check out the recipe!

Ingredient

2-3 cloves

garlic minced

Cooking instructions

* Step 1

Place the bitter melon in a colander, sprinkle with salt. Then squeeze the bitter melon by hand until the juice comes out.

* Step 2

Rinse under cold running water, squeeze gently with your fingers, wash properly, set aside to drain.

* Step 3

Place skillet on the stove heat up the oil on a medium heat. Sauté shallots until fragrant add minced garlic, sauté for another 2 minutes now add the bitter melon.

* Step 4

Continue to cook for 5 minutes until it’s soft but still crunchy. Add chopped salted egg, chicken powder and chili flakes. Mix and sauté for 2 minutes, then set aside to the edge of the pan.

* Step 5

Pour the beaten eggs on the side of the pan, scrambled it and mix them with the bitter melon mixture. Combine and mix well then turn off the heat.

Transfer to a plate, and served with steamed rice. Enjoy!!
