One Pan Folded Egg Sandwich
Another in the series of quick and easy lunches for my three year old. There are lots of different ways to approach this recipe, including dipping the bread into egg before cooking. I keep things simple so that there is less cleanup. It does take a bit of practice to adjust the heat so that the eggs don’t cook too quickly, and to time the flipping so that the eggs don’t tear, but it’s very satisfying once you nail it!

Cooking instructions
* Step 1
Crack 2 eggs in a bowl, add milk, and whisk vigorously.
* Step 2
In a 12 inch non-stick skillet, melt butter over medium- low heat.
* Step 3
Add eggs, then top with the sliced bread. Cover the pan and reduce heat to low.
* Step 4
Rotate the pan every 45 seconds or so to ensure even cooking. When the eggs have mostly set, use a spatula to loosen the eggs from the sides of the skillet, then slide the spatula fully under the bread.
* Step 5
In one smooth movement, flip the eggs and attached bread over.
* Step 6
Add cheese and ketchup.
Like it spicy? Add some Sriracha or hot sauce! (Not recommended for three year olds LOL)
* Step 7
Fold the sides of the egg towards the middle of the bread.
* Step 8
Fold the ends in as well.
* Step 9
Finally, fold one slice of bread onto the other to create a sandwich. Cover the pan and increase the heat slightly to melt the cheese and toast the bread.
* Step 10
After 30 to 45 seconds, flip the sandwich and check how toasted it is. Toast it more if you prefer, then finish toasting the other side.
* Step 11
Cut the sandwich into bite-sized pieces for your child. Watch her gobble it up and realize you forgot to take a picture. 🤷♀️
* Step 12
For my sandwich, I like to add furikake seasoning! You could also add sliced ham, avocado, sautéed mushrooms, or lettuce, if you like.
