Spicy dahi vada aloo dum

Cooking instructions
* Step 1
Wash urad dal and soak it for 2 hours at least.
* Step 2
Grind it, not very thick nor thin. Medium consistency.
* Step 3
Now add grated ginger, chopped green chilli and hing. Mix it well and beat it for 4-5 minutes.
* Step 4
Now take a pan, add oil for deep frying.
* Step 5
Make balls, make a hole in between and fry.
* Step 6
After frying soak it in water for 1 minute.
* Step 7
Let's prepare the dahi, beat the dahi well, add 1 cup water, mix, now add jeera red chilli powder, black salt, salt, grated ginger and mix

Now take 2 green chillies and make a paste and add to the dahi.
* Step 9
Now add the fried vadas. Soak it for minimum half an hour.
* Step 10
Let's make aloo dum. Boil the potatoes, peel it and cut it into four pieces.
* Step 11
Take a wok, add oil, once hot add jeera, chopped onions and fry till slight change in color.
* Step 12
Add ginger garlic paste and fry for another 2 minutes. Add chopped tomatoes and salt. Fry till tomatoes softens.
* Step 13
Now add chopped green chillies and all the spices mentioned in the ingredients. Cook it well.
* Step 14
Add boiled potatoes and 2 cups of water. Let it simmer for 3-4 minutes and it's done.
* Step 15
Time for plating. Take a big bowl add 2-3 dahi vada, some aloo dum and garnish it with chopped onions, chopped coriander leaves and green chilli. Add sev and serve hot.
