Kashmiri Zarda Pulao/ Sweet Saffron Rice
Zarda Pulao or sweet rice is another kashmiri delicacy which is a sweet rice pulao with saffron and nuts and is yellow in colour. A delicious dessert and made in all kashmiri homes during celebrations and festivals!

Cooking instructions
* Step 1
First, drain the rice. Heat ghee in a pan. Slow fry the nuts and keep ready. Then heat some more ghee and add cloves, cinnamon and cardamom. Saute 1 minute.
* Step 2
Then add the rice, salt and saute well. Add hot water, cover and cook till soft.
* Step 3
Then add the sugar (I made a thick sugar syrup with saffron and yellow colour), cardamom powder, saffron, yellow food colour and cook while stirring constantly. When done, it will have a shine. Add half of the nuts and turn off flame.
* Step 4
Serve warm, garnish with rest of the nuts. Enjoy.
