Cauliflower & Spinach Soup πŸ’š

This soup is very simple, light and creamy. I’m hoping it will cancel out all of the Easter eggs I ate over the weekend πŸ˜†

Cooking instructions

* Step 1

Chop up the cauliflower and add to a large saucepan. Add just enough boiling water to cover the veg and simmer for 20 mins.

* Step 2

Add your frozen spinach and cook for another 5-10 minutes until the veg is soft and tender.

* Step 3

Blend thoroughly and add half a teaspoon each of salt and pepper. Stir in the coconut milk then taste here and adjust the seasoning as necessary. For such simple soups I like to season fairly heavily as it helps to bring out the flavour of the veg.
