Easter Mini Egg Brownies
In order to make Easter brownies that the whole family can eat I had to make them #glutenfree, #dairyfree #eggfree and oat free!!! Allergen free baking really is a test for me. If you don’t need to bake like this I think there are much better brownie recipes you could use. If however, like me you need to cater for multiple intolerances, these brownies mean no one misses out completely 😅
Cooking instructions
* Step 1
Firstly make your flax egg by mixing the flaxseed and water and leaving to stand for ten minutes.
* Step 2
Prepare your brownie tin by lining with parchment paper, I prepped a big tin but needed less so I used foil to make it smaller after adding the batter.
* Step 3
Weigh out the dry ingredients and mix them together well.
* Step 4
Melt the chocolate in the microwave stirring every 30 seconds until melted. Add the marg and stir it in until it’s melted. You can give it a final blast in the microwave if needed.
* Step 5
Pour your chocolate mix into a large mixing bowl. Stir in the flax egg and mix well.
* Step 6
Sift the dry ingredients into the bowl. Mix thoroughly but only until the ingredients are just combined (don’t over mix it).
* Step 7
Pour into your tray and bake at 160 C for 30 minutes.
* Step 8
Allow to cool in the tin, then top with Nutella or a vegan equivalent. Dot with vegan mini eggs. Chill before cutting with a clean knife.
