Wild Garlic Chickpea Farinata

Wild Garlic Chickpea Farinata

Yesterday Yui and I made wild garlic pesto love on the Cookpad Facebook page. Today I used some of this pesto to make a farinata (chickpea flour pancake) also called a socca I believe.

Ingredient

Food ration :

1-2 servings

Cooking time :

20 mins

Cooking instructions

* Step 1

Mix together the flour and warm water. Then leave to stand for one hour.

* Step 2

Stir in the olive oil and pesto, then depending on how strong your pesto is you may want to add salt too.

* Step 3

Heat a tbsp of oil in a frying pan and pour all of the batter on. Fry on a medium heat as the base starts to set, then turn the heat down and cook gently for another 10-15 minutes until the top is just set.

* Step 4

You can help the pancake cook by adding a lid or a larger frying pan on top to act as a lid.

I flipped mine to cook it for a final few minutes on the top. Lovely served with some more pesto on top 😋
