Coconut Cauliflower Mash
I'll be honest, I'm not always thrilled to get cauliflower in my #seasonsupply veg box. I find it a bit boring on it's own, but this creamy mash is a lovely way to eat it. The subtle flavour of the cauliflower is combined with garlic and coconut milk, for a nutritious alternative to mashed potato.
Cooking instructions
* Step 1
Prepare the cauliflower by removing the leaves and tough inner stalk. Chop roughly into even sized florets and place in a pan of boiling water. Simmer for 10 – 15 minutes until nice and soft, but not water-logged and soggy.
* Step 2
In a medium sized saucepan, gently heat the garlic, coconut oil and coconut milk for 5 minutes. Add the drained cauliflower florets to the pan and stir to combine. Continue cooking gently for another 5 minutes.
* Step 3
Allow to cool slightly before putting the entire mixture in a food processor (if you don’t have a food processor you can mash by hand, although the mash won’t be as smooth). Process until nice and smooth. Season to taste with salt and pepper.
* Step 4
Serve the mash nice and hot, piled into a bowl and topped with an extra tbsp. of coconut milk.
