Panera Bread Copycat Chicken Wild Rice Soup
This is a delicious recipe that is great for a cold winter night. You can eliminate the cream and decrease flour if you wish to have a thinner broth based soup. If you make it that way, it’s great for those who are recovering from an illness. For a more hearty delicious meal, add the cream and the flour as in the recipe. I have made this for ill family members during the pandemic and was pleased it helped them in their recovery

Cooking instructions
* Step 1
In small nonstick pot. Melt butter (may add splash of olive oil to prevent browning of butter)
* Step 2
Add carrots, saute 2-3 minutes, add celery, cook another 2-3 minutes, add onion. Saute until tender
* Step 3
Add seasoning packet and stir. Add flour and pepper and stir over low-med heat for 1-2 minutes. Remove from heat
* Step 4
In large soup pot, add chicken broth and dry rice from box. Boil 8-10 minutes.
* Step 5
Add chicken to rice and broth.
* Step 6
Add saute veggie mix to large soup pot, stir till thickens. Cook on low-med heat for 5-10 minutes.
* Step 7
You may add milk/cream to your liking (you can add the cream to saute mix prior to combining or at the end… whatever you prefer) no need to add the cream if you want a thinner clear broth based soup.
* Step 9
Great complements —salad and/or garlic bread, butter/jelly bread, or buttered toasted Hawaiian rolls (I use my air fryer to toast the rolls then add butter and toast a little longer)
