Ingredient

celery

1 medium

leek

1 large

bacon shank

3/4 lb

red lentils

Cooking instructions

* Step 1

cook the shank in enough water to cover it

* Step 2

simmer for approx. 1hour

* Step 3

when its cooked remove the shank and let the liquid cool

* Step 4

strain the liquid through a strainer

* Step 5

add the washed lentils

* Step 6

wash and dice the veg

* Step 7

add to the soup

* Step 8

simmer gently until the veg is almost cooked adding more water if needed

* Step 9

cut all the fat off the meat, dice it and add it to the soup

* Step 10

check taste before adding any salt
