Cooking instructions
* Step 1
Dry roast urad dal until aromatic and golden. Allow it cool. Grind it to a fine powder. Sieve 1 cup rice flour and 4 tbsp urad dal powder.
* Step 2
In a kadai pour enough oil to fry the chakli and heat it on a medium flame.
* Step 3
In a bowl take rice flour, urad dal powder, sesame seeds, chili powder, salt, hing and mix well. Heat 1 tbsp oil and pour into the flour.
* Step 4
Mix the oil into the flour. Then add water little by little and form the dough. (No need to knead the dough and do not rest the dough. It should be fried immediately). Divide the dough into cylindrical logs.
* Step 5
Take chakli press with star shape plate. Oil the press and fill it with logs.
* Step 6
On a butter paper or clean cloth press the mould into spirals. Slightly press the end to prevent it from breaking while frying. (Check if the oil is hot enough by dropping a small ball of dough. The ball shouldn't sink but rise up without browning immediately)
* Step 7
Carefully place one chakli onto greased ladle and slide it into hot oil.
* Step 8
You can fry 4 to 5 chakli at a time. Fry on medium flame until golden on both sides. Remove them onto a tissue paper to drain excess oil.
* Step 9
Let the chakli cool completely before serving or store in an airtight container.
