Spanish inspired omelette with potato, onion and pumpkin in air-fryer!

I selected “potato” and “egg” in the Fridge Ingredients section on the Inspiration Feed in the app, and Spanish tortillas came up! And this morning, I saw @becky ‘s Spanish omelette recipe… so maybe the universe (and Cookpad) was telling me to cook it for lunch 😊

Cooking instructions
* Step 1
Thinly slice the vegetables and rinse with cold water
* Step 2
Toss the vegetables with a drizzle of olive oil and add them to the air fryer - we have the big one with two drawers so I put them separately. Cook over 180C for 15 minutes
* Step 3
Move the veggies to a big pan, sauté for a few minutes while you get the eggs ready and beat them with a pinch of salt
* Step 4
Pour the eggs over the vegetables, reduce the heat to medium/low, cover with a lid and cook until you can see that the bottom is cooked.
* Step 5
Now get a large flat plate, cover the pan with it and flip the omelette carefully. Thanks @jose for helping! Then return the omelette to the pan to cook the other side for almost 2-3 more minutes and flip again on the plate
