Cooking instructions
* Step 1
Soak saffron with milk. Keep few Saffron strands to add on later while cooking. For quick soaking and deskinning, wash and add hot water to the almond and boil for about 5 minutes. Once it cools Deskin it. Keep a few deskinned almonds and chop and make slivers out of it for Garnishing.
* Step 2
Now add the deskinned almonds and saffron milk, grind and make a paste.
* Step 3
Heat ghee in a nonstick pan preferably. Once heated add the almond paste mixture to it, mix and keep on stirring frequently so that it doesn't stick to the bottom and burn. Add the saffron strands which were kept aside. After the almond paste reduces by 50 %, you will smell the nutty aroma of the almond, almost after 10 minutes, now add the sugar and the green cardamom powder and mix well.
* Step 4
It will thin down a little, keep on stirring, slowly it will thicken up and start drying and forming a lump in the next 10 minutes and when the ghee starts oozing out that means your Halwa is ready. Put off the flame. Put it in a serving plate/bowl. Garnish it and serve while still warm.
