Grilled Potato Veggie stuffed Sandwich

This used to be our favourite breakfast/ snacks over the weekends or holidays. My Grandma used to make it dedicatedly...she used to make this stuffed bread in two ways, one is dipped in Besan batter ( like Pokora/ Pakoda) and deep fry it and another way was to grill it in a stovetop Griller - a single sqaure aluminium Griller used to be there with a handle which we could turn and grill our stuffed bread in it. We used to wait eagerly as we watched grandma grill it. Now it can be comfortably done in an electric Grill Toaster.
The cooking time is the last minute preparation and grilling time.

Cooking instructions
* Step 1
Smash or grate potato and mix all the ingredients in a bowl as listed above except the butter and bread. Once the potato veggie mixed stuffing is ready spread sufficient amount of it on one slice and keep another on top. Do this for all bread slices. Do not overstuff as it will all come out when it get pressed in the grill toaster.
* Step 2
Apply butter on your Grill toasted on both sides with a brush. Place the stuffed bread sandwich and close it and grill for 1-2 minutes or till you get your desired color and crispiness.
Once done, cut it and serve hot with your favourite Chutney and sauce. Bon Appetite!
