Ragi plate idli with onion chutney
This is one of the best combinations. Do try.
Ragi has lots of health benefits. It is rich in calcium which is very essential for all age groups.

Cooking instructions
* Step 1
Soak urad dal and idli rava separately in the afternoon.
In the night wash urad dal and idli rava. Strain them. Now grind urad dal using minimum water. Next take idli rava and ragi flour, mix them into the urad dal paste. Whip mix.
Now keep this batter for natural fermentation. When you find bubbles in your batter you know it's ready.
Add salt and mix. Next place a kadhai, heat oil. Splutter mustard seeds and cumin seeds. Add this tadka into the batter, mix.
* Step 2
Next heat your steaming unit having water. Take a plate, since this is plate idli. Grease it with desi ghee. Pour batter. Even it. Place it for steaming. Steam for 12 minutes, check by poking.It must come out clean.
* Step 3
Ragi idlis are ready. Let it cool. Then demould.
* Step 4
Now for chutney place a kadhai. Heat oil. Add chana dal, gota urad dal, peanuts and dry red chilli.
* Step 5
Fry at slow flame.Dust hing. Then add chopped onion. Saute till translucent.
* Step 6
Switch the flame off and let it cool. As it cools, take it in a blender jar. Add salt, tamarind and little water. Grind. Then add some more water and grind till you get a perfect chutney consistency.
* Step 7
Transfer to a dish.
For tempering the chutney. Heat oil in a kadhai. Splutter mustard seeds and curry leaves. Switch off. Add this tadka to the chutney.
So hot hot ragi plate idlis are ready. Pour hot hot ghee on RAGI IDLIS before serving. It tastes awesome.
Serve with onion chutney.
