Spiny gourd pakodas (Kakrol bajji)

This seasonal vegetable has lots of healthy benefits though it may look bit odd.. I find many people in my area are not well versed of different preparations of this vegetable. This vegetable can be fried along with potatoes, it can be added into mixed veg curries or even made into bajjis/ pakodas like this... Ingredient

Food ration :

4 persons

Cooking time :

30 minutes
to taste

Salt

1 cup

besan

1/2 cup

rice flour

1/4 cup

cornflour

1/4 tsp

garam masala

1/2 tsp

curry powder

1 pinch

baking soda

1 tbsp

oil

Cooking instructions

* Step 1

Wash and cut slices of the gourd, take in a microwave safe container, add salt, turmeric and water. Microwave for 6-7 Minutes. Strain and keep aside.

* Step 2

Prepare for batter. In a mixing bowl, add all the above-mentioned ingredients. Whip mix for nice areation.

* Step 3

Now heat oil for deep frying. Oil must be medium hot. Dip each slice into batter and put into the oil.

* Step 4

Fry till it has a nice golden brown colour and looks crispy. Strain. Serve hot.. Your Kakrol bajji can be a nice side dish with your meals... Include it in your diet sometimes...
