Pickled lettuce soup with pork ribs

Cooking instructions
* Step 1
Prepare all the ingredients and cook a night before serving.
* Step 2
Add pork ribs, pork spine, salt, garlic, white peppercorns, coriander roots and water to a Pressure cooker. Cook for 30 mins. Remove excessive fat from the surface. Transfer to a large cooking pot.
Note: if you use slow cooker. Cook for 3-4 hr.
* Step 3
Heat the cooking pot with medium heat. Add pickled lettuce. Let it simmer for 15-20 min.
* Step 4
Let the soup cool in the room temperature. Keep it in the fridge overnight.
* Step 5
On the next day, reheat the soup and serve with a cup of warm steamed rice for each person.
