Smoked haddock and leek pie

Cooking instructions
* Step 1
Pour the milk into a deep frying pan and ad the bay leaf and black pepper
* Step 2
Place over a medium heat. Meanwhile cut the haddock
* Step 3
When the milk is warm add the fish to the pan and cook for 6-8 minutes
* Step 4
Remove from the heat and using a slotted spoon remove the fish from the milk. Remove the skin from the haddock and palce into a baking dish
* Step 5
Now peel your potatoes, cut into 1cm slices and boil until tender
* Step 6
In a clean pan add 1 sliced leek and soften for 2-3 mins
* Step 7
Add the butter, melt then add the flour to make a roux
* Step 8
Slowly start adding the milk that the fish was cooked in a little at a time, stirring constantly
* Step 9
Pour the sauce over the fish.
* Step 10
Drain the potatoes and mash with a knob of butter and splash of milk. Spread over the fish mixture then place in the oven at 180c for 40 minutes until golden and bubbling
