Rice Straw Mushrooms Spicy Curry

Cooking instructions
* Step 1
Clean the mushrooms. Cut large ones. Wash in turmeric water. Drain and set aside.
* Step 2
Make onion paste by grinding onion with ginger, garlic and green chilli.
* Step 3
Mix coriander, cumin, garam masala powder and red chilli powder with 2 -3 Tbsp water to make a paste.
* Step 4
Mix coconut paste and tomato puree.
* Step 5
Heat 2 Tbsp oil in kadhai. Fry the potato chunks till done. Set aside.
* Step 6
Add rest 1 Tbsp oil, heat and add onion mixture, saute on medium heat till separation of oil from masala.
* Step 7
Now add coconut and tomato paste, turmeric and salt, fry for 2 minutes.
* Step 8
Then add dry masala paste, mushrooms, fried potatoes and cook on low heat for 6-7 minutes or the water from mushrooms dries up.
* Step 9
Add required amount of hot water to make the gravy. Cover and cook for 2 minutes. The delicious Paddy Straw Mushroom Curry is ready to serve. Enjoy with steamed rice/roti.
