Kedgeree

A quick and easy lunch or supper dish. I don't bother with the curry flavouring as I like the taste of the smoked fish and butter to shine through.

Ingredient

Food ration :

2 servings

Cooking time :

20 minutes
1 cup

rice

60 grms

butter

Cooking instructions

* Step 1

Place rice and eggs and fish in a pan and cover with water plus.

* Step 2

Boil for 5 minutes (you don't want the fish to break up too much but the rice must be done!)

* Step 3

Remove eggs and fish.

* Step 4

Strain rice and leave to steam under a kitchen towel.

* Step 5

Skin fish and flake into hot rice.

* Step 6

Peel eggs and chop into quarters.

* Step 7

Add butter and chopped parsley, salt and pepper to rice and mix gently.

* Step 8

Place rice mixture in a serving dish and top with egg quarters.
