H's fluffy meringues
These were the last three from a batch of 20 made the same day. They are delicious
Cooking instructions
* Step 1
Preheat oven to 100°F Celcius
* Step 2
whisk egg whites until just foamy.
* Step 3
Add the cream of tartar (this stabilises the egg foam).
* Step 4
whisk until the egg white forms stiff peaks when the beater is lifted.
* Step 5
add the sugar, a little at a time, beating to stiff peak stage at each addition
* Step 6
whisk in the vanilla essence.
* Step 7
using 2 teaspoons or a piping bag, shape meringues onto baking paper. Bake at 100°F Celcius for 2 1/2 hours or until dry
