Smoked Megadra {lentils with Rice}

Smoked Megadra {lentils with Rice}

Ingredient

1/2 tablespoons

Cooking instructions

* Step 1

Wash the lentils and add clean water to the pan, add 2 tablespoons of cumin and set to boil until almost well done

* Step 2

Bring the rice in a bowl and soak for about 20 minutes at a room temperature, drain and add all the seasoning

* Step 3

Bring the 2 large onions peel the skin and slice the onions. Now add them to the hot olive oil to fry until slight golden

* Step 4

Add the rice to the lentils pan along with the fried onions (making sure not to add in all the olive oil as some needed later for adding the grilled/ smoked flavour) now add kettle boiled water to cover the rice full and allow to boil for 10 minutes on a medium heat and alter the heat to the minimum temperature until its fully cooked

* Step 5

Please make sure by that time you have already set the charcoal on oven and already flamed and ready to use On a piece of foil add the onions skin/peels and place the hot flamed charcoal on the onions skin and place over the rice and lentils. Now add the remaining olive oil used to fry the onions and cover the pan. Allow to set for a 2-3 minutes and can remove the charcoal with remainings

* Step 6

Tip: Can cover the pan with towel to keep warm if not to be served instantly

* Step 7

Garnish the serving plate with chopped parsley, fried almonds flake and fried sultana enjoy 😉
