Peach Summer Pudding

Peaches are naturally rich in Vitamin A and C along with having antioxidant and anti inflammatory properties. Do try out this easy peachy delight.

Cooking instructions
* Step 1
First, wash and dry the peaches. Then make a cut in the centre and discard the seed. Slice into small pieces. Reserve some long slices for garnish.
* Step 2
Transfer to a microwave safe bowl. Add jaggery powder and 1 tablespoon water. Microwave on high for 3 minutes and rest covered for 5 minutes. Now you will have soft cooked juicy peach compote ready.
* Step 3
Meanwhile, dissolve the custard powder in 2 tablespoon of cold milk and break all the lumps. Keep the milk in a saucepan to boil on medium heat and when it reaches boiling point, add the custard powder. Keep stirring till it is thick and soft.
* Step 4
Keep aside for cooling till use. Then take the bread slices and cut off the edges. Then slice them in long strips.
* Step 5
Take a flat glass pudding dish. Arrange half of the bread slices in a layer at base. Pour half of the peach juice on top. Then spread 2 tablespoon of custard on top. Then spread some of the cooked peach slices on top.
* Step 6
Arrange another layer in the same order. Top with custard and peach layer. Now cover with cling wrap and refrigerate for 3 to 4 hours.
* Step 7
Remove from fridge. Decorate with more peach slices. Cut into triangular pieces and serve.
