Cucumber,Mint and Lemon grass Koshimbir with Tulsi leaves
In Maharashtrian cuisines, the Koshimbir or salad plays a very important role. It's full of healthy vegetables, flavourful herbs and spices. It helps to balance the tastes , adds a new dimension to a meal, provides a delicious side dish for any meal and goes well with all meals. I have made this grated cucumber salad infused with Tulsi, Mint and Lemon grass. It tastes divine.

Cooking instructions
* Step 1
First, add the grated cucumber in a bowl. Squeeze any excess water and use it for making daal or kadhi.
* Step 2
Then add chillies or chilli powder, salt, sugar, cumin powder to it and mix well.
* Step 3
Then heat oil in a tadka pan. Add mustard, cumin and hing. Let it pop. Add curry leaves and lemon grass pieces, Tulsi leaves to it and mix gently.
* Step 4
Add coriander leaves, lemon juice and combine well. Finely finish the Koshimbir with fresh coriander leaves. Serve with any day hot meal or rice and daal or chappatis. Enjoy!
