Purple Sweet Potato Upma (Savoury Spicy Purple Sweet Potatoes)
Purple sweet potato is a delicious root and tuber vegetable which is nutritious, full of fibre and energy and is a very satisfying meal. I have made Upma or a savoury dish using it and it tastes delicious 😋. Its rich in minerals like calcium, iron and vitamins like vitamin c and K. Also it is good for weight management and easily digested. Do give a try.

Cooking instructions
* Step 1
First, wash and peel the sweet potatoes and rub with lemon juice to avoid darkening.
* Step 2
Then grate the sweet potatoes and again sprinkle lemon juice to keep the colour intact. Also add salt, chilli powder and Cumin powder and mix well.
* Step 3
Then heat ghee in a pan. Add cumin seeds and let them pop up. Then add chillies, ginger and stir well.
* Step 4
Then add the purple sweet potato gratings and stir cook for 10 minutes on low flame.
* Step 5
Then mix in 1/2 cup water, peanut powder and cook covered till soft and translucent.
* Step 6
Switch off the heat, mix in peanuts, lemon juice and serve garnished with chopped coriander leaves and fresh yoghurt at the side. You can also serve sweet lime pickle and coconut chutney. Enjoy!
