Soy flour, Bread and Carrot Meduvada

This recipe is my twist on the regular Meduvada . The bread adds crunch to it while the protein is boosted with soy flour. I also added carrots for extra nutrition. It's an excellent , healthy recipe for kids tiffin, breakfast and snacks too. Ingredient

20 minutes
2 tablespoons

soy flour

2 tablespoons

grated carrot

1 tablespoon

yoghurt

1/2 tsp

cooking soda

as needed

Oil to fry

Cooking instructions

* Step 1

First, drain the soaked urad daal, methi seeds and add to the grinder. Then grind with bread, soy flour, carrots, salt, ginger and chilli paste and black pepper. Grind to a smooth paste using very little water. Add yoghurt to the paste and mix well.

* Step 2

Then keep covered for 1/2 an hour. Then heat oil on medium heat. Then mix in baking soda in the batter.

Then fry small rounds of the batter in medium hot oil till crisp and golden. Keep the flame to medium low to avoid over frying

Serve with coconut chutney and enjoy!
