Maharashtrian Kadhi (कढी)
Even though there are many recipes of Kadhi in every state of India, the Maharashtrian Kadhi is different, flavourful and a combination of sour, sweet and Spicy tastes. It is usually served with Puran Poli, varan bhat, plain rice or daal Vada. Enjoy!

Cooking instructions
* Step 1
First, mix together curd and besan. Make a lumps free paste with a whisk.
* Step 2
Then slowly add water and keep whisking to get a smooth running mixture. Keep it to heat on low flame.
* Step 3
Keep a ladle immersed in the mixture to avoid over flow and separation of water and buttermilk.
* Step 4
When it starts getting a boil, add chill and turmeric powder, ginger, curry leaves and keep stirring. Pour tempering as it reaches a boil.
* Step 5
Prepare a tempering of ghee, cumin, hing and pour it on the boiling kadhi. Switch off the flame and cover the pan to let the flavours get in.
* Step 6
Add salt and sugar at the end, and mix well to dissolve it. Garnish with coriander leaves. Serve hot and spicy Kadhi at all meals.
Note: you can add boiled drumstick beans and slices of radish to the kadhi for yumminess!
