Maharashtrian Kadhi with Drumsticks
Kadhi is such a delicious and essential part of Indian cuisine. Every region has their kadhi recipe and it has so many beautiful names too . It's basically prepared with besan and curd but can be made with peanuts paste, kokum juice, coconut milk, soya milk, mango juice, pineapple juice and so many more ingredients. This recipe is special maharashtrian recipe of kadhi with Drumsticks which we call "shevgyachi kadhi" / शेवग्याची कढी. Enjoy!

Cooking instructions
* Step 1
First, microwave the drumsticks in 1/2 cup water and 1 tsp salt on high power for 3 minutes or till they are soft. Keep covered.
* Step 2
Mix besan, curd, chillies, 2 to 3 curry leaves, turmeric powder, chilli powder, and make a paste using water. Add more water and whisk with wooden whisk.
* Step 3
Keep this mixture to boil on slow heat. Do not add salt before it boils. When it reaches boil, keep a spoon inside and let it simmer well.
* Step 4
Switch off after 5 minutes and then add the cooked Drumsticks and adjust salt and sugar. Maharashtrian recipes usually have sugar to balance taste.
* Step 5
Then heat ghee and pop cumin seeds. Then add the remaining curry leaves, hing, a pinch of turmeric and immediately add to the kadhi. Cover for 1 minute to infuse the tempering.
* Step 6
Heat on slow flame and switch off before it boils. Otherwise it may split due to the salt. Then serve piping hot with khichdi or rice and serve papad and pickle for a delicious meal. Enjoy!!
