Date and Sesame Buns(Free of Yeast, Soda,Maida & sugar)

Dates are rich in energy, calcium, iron and aid in overall strength building. Sesame seeds are Superfoods which are calcium rich, and are good for bones! These baked buns are free of Yeast, Maida, Sugar, Baking Soda and Margarine. They are made using whole wheat flour, sesame seeds and filled with delicious dates! Super fun and super healthy! Ingredient

1/4 cup

Pure ghee

2 tablespoons

Curd

2 pinch

Salt

1 tablespoon

Cooking instructions

* Step 1

First, take the flour and salt in a bowl and whisk well for aeration. Then add ghee and curd and mix with fingers to form a crumbled mix.

* Step 2

This will ensure that all the flour is coated well with ghee. Now slowly knead to a soft dough using very small quantity of warm water(add in batches as needed) Knead it well for 10 minutes.

Cover with cling wrap or wet kitchen towel and keep in a warm place for 5 to 6 hours (I kept in a warm oven in switched off mode)

* Step 4

Grease and line a baking tray with parchment paper. Now gently press the dough 4 to 5 times. Carefully take out small balls from the dough and place 1 small spoonful of chopped dates in the centre. You can also keep one or two whole dates in the centre if you like instead of chopped dates.(You will see that the dough has fermented well and a sponge like net can be seen in the dough)

* Step 5

Close the opening with pinched fingers. Make all the buns in similar fashion. Brush the tops with milk. Sprinkle generously with sesame seeds.

* Step 6

Keep to ferment again for 1 hour in warm place. Now preheat oven at 180 °c for 10 minutes. Place the tray inside and bake for 25 to 30 minutes or till golden on top.

* Step 7

Remove from oven. Brush with more melted ghee. Cover with moist kitchen towel for 1/2 an hour.These buns have a natural sour and sweet taste. Unlike yeast fermented bread!

* Step 8

Your delicious buns are ready to be eaten with a hot cup of coffee or chai! Enjoy!

* Step 9

Tip : You can add 1/2 tsp yeast dissolved in 1/2 cup milk and add to the flour instead of curd and make the buns in regular bread style. Time for first fermentation is 1 hour and second or final fermentation is 30 minutes.
