Tomato and Beet Shorba

Shorba is indian style soup which has special Indian flavours and spices. Unlike soup, it is flavourfull and tempered too. This beautiful recipe of beetroot and tomato shorba was a perfect accompaniment to my soya and subji biryani. Cooking instructions

* Step 1

First, boil 1.5 cups water in a pan. Add the beetroot and tomato pieces, cinnamon, bayleaf, black pepper, cloves and cardamom.

* Step 2

Cover and cook till the beet and tomatoes are soft. Then remove the peels of tomatoes and remove the whole spices. Cool the vegetables in their water to room temperature.

Now grind the vegetables in some water to a fine paste. Strain the paste.

* Step 4

Heat the pan, add ghee. Then pop mustard seeds, cumin seeds. Then hing and the prepared paste and saute for 2 minutes. Add all the spices and 2 tablespoon water.

When the water starts bubbling, add the prepared paste, salt, sugar and rest of the remaining red coloured cooking water.

* Step 6

Adjust the consistency as per the thinness required. When it starts boiling, crush the Curry leaves with fingers and add to the shorba. This will give a beutiful taste. Remove from heat after boiling for 2 minutes. You may garnish with chopped coriander leaves.

* Step 7

Serve delicious Shorba with Biryani or pulao or just have as a soup before your meals. Enjoy!
