Sweet Potato Basundi/ Rabdi
Since we are sharing so many delicious desserts in this festival season, I have prepared the delicious Maharashtrian milk sweet Basundi (you can further reduce it to Rabdi)with sweet potato. It tastes so delicious, and it's low on sugar and high on nutrition. Give it a try!

Cooking instructions
* Step 1
First, peel and mash the sweet potatoes. Now pass this mixture through a sieve to get a smooth paste and the long fibres in the mash are removed.
* Step 2
Then keep the milk in a deep stainless steel or non-stick kadhai on low flame. Keep stirring. When milk reaches boil, take out some in a bowl.
* Step 3
Mix the sweet potatoes paste, mill powder and make a paste with the milk. Add this to the slowly boiling milk.
* Step 4
Stir cook till the mixture is thick. Then add sugar, Saffron, cardamom and mix well. Stir cook for another 10 minutes.
If you want to make Rabdi, then reduce it further while stirring on low flame, till it is thick and has chunks of Malai or thickened milk inside. But I have made it thinner into Basundi as family loves it
* Step 5
Now remove from heat. Mix in the nuts and cool to room temperature. Serve chilled or warm with hot puris. Garnish as per your choice and enjoy!
