Mutton Yakhni Pulaw

Indian rice dish made with meat and rice that is cooked in an aromatic stock flavoured with whole spices.
Cooking instructions
* Step 1
First wash the mutton well and keep aside.washed the rice and soaked into water for half hour.cut the onion into four pieces and cut ginger into small pieces.slit the green chillies and cut into two parts. Take a piece of muslin clothes put all the whole spices in it and tied it.
* Step 2
Take a pressur cooker add mutton,onion,garlic pod,ginger pieces and tied potli of whole spices.add water and salt.cover and pressure cook for one whistle on high flame then cook on medium flame for 3-4 whistle.releaae the pressure naturally. When meat has cooked strain the yakhni in another bowl.
* Step 3
Now take a wide mouth wok add ghee and heat it then add whole spices and onion slices.fry onion until they turn light brown then add ginger garlic paste and crushed green chillies.saute for one minutes.
* Step 4
Now add the mutton,add salt. mix well. cooked for 4-5 minutes on high flame.turn the flame low add whisk curd mix well and cooked on medium flame until the water dry up.now add the yakhni water and let it a boil.then add soaked rice.
* Step 5
Mix the rice well. if level of water is below than rice add some more water.at this stage check the salt.id required add more and mix gently.now cover the lid and cooked on high flame when a boil comes and water level reached equal to rice turn the flame slow.cook on low flame for 15- 20 minutes.the pulav has perfectly cooked.turn off the flame.leave it for ten minutes then open. serve with salad and raita
