Cooking instructions

* Step 1

Take a mixing bowl, add besan, hing, haldi powder, salt & oil, mix it well.

Add water slowly slowly, knead a soft dough, cover it, rest it for 10 minutes.

Now take med sized portions from the dough, roll it, make logs, rub some oil on your palm while making them, keep aside.

Take a big wok, or deep bottom pan, add good amount of water & 3 tbsp oil, boil it.

Add besan logs in the boiling water, cook it till done.

To check it, insert a knife in the boiling logs. If they are hard, logs are done. Also the surface of logs will become rough. Take out in a dish, keep aside.

Keep the left over water, can be used in gravy.

Cool the logs, cut into 1/2 inch roundals, keep aside.

Now take another wok or deep bottom pan, add oil, heat it.

Add whole garam masala, saute it for a sec.

In goes ginger garlic paste, add very lil water, saute it until rawness is released.

Now add onion paste, stir fry it until brown. Add lil water to avoid burning.

Now add tomato puree & salt, give a stir.

Lower the flame, cover it with the lid, cook it until oil has oozed out.

Open the lid, add Kashmiri red chilli powder & kasoori methi, mix it well.

Mix dahi with all the powdered masala, add in the masala, increase the flame, stir it for a minute. Add ghee now.

Cover it again, lower the flame, cook it until oil has surfaced.

Open the lid, increase the flame, add Taka Paisa, mix it well.

Add 3 cup boiled water, stir it, give a boil.

Lower the flame, cover it again, cook it until gravy becomes a lil thick, stir only once in between.

* Step 21

Turn off the flame, open the lid after 10 minutes.

Take out in a serving bowl, garnish it with chopped dhania patta.

Can be served along with any bread or Paratha... Poori is also a good combo.
