Mithe Chawal with Kesariya Rabdi

Cooking instructions
* Step 1
Soak rice for half an hour. Add turmeric powder and cook the rice for 12-15 minutes.
* Step 2
Take the cooked rice and start layering it with sugar and desi ghee. Garnish with mix nuts in each layer.
* Step 3
For Rabdi, add the milk to a heavy bottom kadai and after the first boil, take two tablespoons of milk out in a katori and mix it with kesar.
* Step 4
Keep the flame at low-medium. Keep stirring until it reduces to 30% of the total. The mixture would appear little thicker. Add sugar, kesar mixture and mixed nuts. Continue stirring.
* Step 5
Turn the flame off, add elaichi powder and let it cool.
* Step 6
Serve the mithe chawal along with chilled kesar Rabdi. Happy Basant Panchami
