Basil Pesto and Bruschetta

Cooking instructions
* Step 1
Basically, Pesto is a blend of fresh basil leaves, nuts, garlic and olive oil.
* Step 2
First crush the nuts on pulse mode to a coarse powder. Keep aside.
* Step 3
For the Garlic Oil:
Pound 6-8 garlic segments and add 3 tbsp olive oil and mix.
* Step 4
Now take basil leaves and the remaining garlic in a mixer jar. Add salt to taste. Crush on pulse mode coarsely. Add in 1/3 cup olive oil. Crush but keep the paste coarse.
* Step 5
Now add in the nut-seed coarse powder. Add a dash of lemon juice.Crush to a coarse pesto paste. Now add cheese and blend to get a tasty lip- smacking BASIL PESTO.
* Step 6
This Basil Pesto is very versatile. It can be used as a dip or in making a variety of dishes like pasta, sandwiches, pizza.
* Step 7
I have prepared Basil Pesto Bruschetta using Homemade Pav.
Prepare a salad of boiled corn, capsicum, tomatoes, onions, chilli flakes and oregano. Do not add salt in the salad, else water will release from the vegetables.
* Step 8
Cut pav into halves. Apply garlic oil using a brush and toast the pav halves on a grill pan.
* Step 9
Then take the pav on a plate and apply BASIL PESTO on the grilled side of the pav. Place a small piece of cheese slice over it. Place the salad and now sprinkle salt for the salad.
* Step 10
Apply garlic oil and grill the base side of bruschetta crispy. Serve with the prepared BASIL PESTO.
* Step 11
