Whole Wheat Banana Bread
This is a perfect snack that you can enjoy anytime you want. It's super easy to bake, vegan, refined sugar-free, refined flour free and eggless.
Cooking instructions
* Step 1
Grind cinnamon stick and flax seeds to make fine powder. To this add 1/4 cup water, mix well and keep aside. This is flaxmeal, a substitute of egg.
* Step 2
Mash banana in a bowl using fork and make a smooth batter.
* Step 3
Grind jaggery to fine powder and add it to mashed bananas.
* Step 4
Next add virgin coconut oil and mix well.
* Step 5
Add vanilla extract, flaxmeal (we prepared earlier) and mix well using whisk.
* Step 6
Now sieve in the whole wheat flour to wet ingredients.
* Step 7
Next we need to add oats, baking powder, baking soda, salt. Do not mix yet.
* Step 8
Lastly add raisins and coat raisin into flour so that it won't stick to the base while baking.
* Step 9
Once raisins are coated in the flour, fold dry ingredients into wet ingredients.
* Step 10
Grease the bread loaf tin with coconut oil, line it with parchment paper and transfer the batter into tin. Level it evenly using back of spatula.
* Step 11
Lastly sprinkle some chopped cashews, flaxseeds and oats.
* Step 12
Bake it in the preheated oven at 180°C for 15-18 mins. Once baked, let it cool for 20 mins before slicing.
