Coriander and spinach vadi
Coriander and spinach vadi/(kotambari and palak vadi )kotamabri vadi is a popular maharastrian snack. It is usually considered to be a deep fried snack.
Bt to make it healthier snack i made a small twist here, i added some spinach and shallow fried it using a with very little oil.
Cooking instructions
* Step 1
Combine all the ingredients in a deep bowl and knead into a firm smooth dough, using 1tbsp of water
* Step 2
Shape it into a cylindrical roll of approx. 175mm (7") in length and 37mm (11/2") in width
* Step 3
Place the roll on a sieve and steam in a steamer on a high flame for 10 - 12 mins
* Step 4
Remove and keep aside to cool slightly
* Step 6
Heat 1tsp oil in non stick pan add fry vadi's for 5 mins
