Coriander and spinach vadi

Coriander and spinach vadi/(kotambari and palak vadi )kotamabri vadi is a popular maharastrian snack. It is usually considered to be a deep fried snack. Bt to make it healthier snack i made a small twist here, i added some spinach and shallow fried it using a with very little oil.

Cooking instructions

* Step 1

Combine all the ingredients in a deep bowl and knead into a firm smooth dough, using 1tbsp of water

* Step 2

Shape it into a cylindrical roll of approx. 175mm (7") in length and 37mm (11/2") in width

* Step 3

Place the roll on a sieve and steam in a steamer on a high flame for 10 - 12 mins

* Step 4

Remove and keep aside to cool slightly

* Step 5

Cut into round shapes

* Step 6

Heat 1tsp oil in non stick pan add fry vadi's for 5 mins

Serve hot
