Thandai is a cool and refreshing drink prepared with dry fruits and fragrant spices. Thand in Hindi means cold , therefore Thandai is a cool and refreshing drink. A very popular drink made in India ; during the festive season of Shivratri and Holi
Cooking instructions
* Step 1
Wash and soak almonds overnight.
* Step 3
Grind all the ingredients.
* Step 4
In the last grind khus khus.....as it becomes bitter if kept for a long time.
* Step 5
In a heavy bottomed vessel ; combine sugar and water.
* Step 8
When sugar melts completely ; add 1 tbsp of milk and mix.
* Step 9
Once it starts boiling ; dirt will settle up ; remove and throw it.
* Step 10
Add all the grinded paste and mix well.
* Step 11
Be careful ; it takes few seconds to boil.
* Step 12
Keep on slow flame for 15mins.
* Step 13
Again on high flame for 10 mins.
* Step 14
Mix well ; close the flame ; cover and keep it overnight to cool.
* Step 15
Next day ; strain the Thandai and do the bottling.
* Step 19
After bottling add little kesar to each bottle.
* Step 20
Close the cup / lid of the bottle and keep in cool place.

How to make Thandai from the residue.
* Step 22
Add 2-3 glass of milk ; strain ; add ice cubes and serve chilled.

How to serve this concentrated Thandai....

In one glass of cold ; milk ; add 2tbsp of Yhandai syrup ; ice cubes and serve chilled.
