Protein Packed Turkey and Vegetable Soup

Newbie in the bariatric world, protein and vegetables are the first thing I eat. I usually don't have room for carbs so I try and fill up on delicious and nutritious meals. Using bone broth adds in more protein to this soup.

Ingredient

Food ration :

4 people

Cooking time :

45 minutes
2 tablespoons

olive oil

5 cloves

garlic, minced

6 cups

raw spinach

1 teaspoon

powdered garlic

1 teaspoon

powdered onion

1 tablespoon

oregano

1 teaspoon

thyme

2 tablespoons

tomato paste

1/8 teaspoon

cayenne pepper

Cooking instructions

* Step 1

In a large dutch oven over medium heat add in the olive oil.

* Step 2

Add in your garlic once oil is warmed. Stir and cook for 1 minute. Add in the onion and carrots.

* Step 3

Cook for 5 minutes, stirring occasionally.

* Step 4

Add in tomato paste and stir. Cook an additional minute or two. Add in the ground turkey and cook until no longer pink. Now add in the spinach.

* Step 5

Stir and add all spices. Then add broth.

* Step 6

Simmer over a low heat for 30 minutes.

Being that I cook this for my family too I now start a basmati rice for them. They add the rice into their bowls and then the soup. I eat it as is.

Sprinkle the romano over each bowl.
